Chef Alastair Porteous is creating the “Flavours of Sinaloa” next week in Gastown

Big Lou’s Butcher Shop and Gringo are pleased to welcome good friend and superb chef Alastair Porteous to Vancouver for a series of special Mexican dining events. A chef for 25 years, Alastair has been based in Mazatlan for the last 8 years, where he runs the highly-regarded Water’s Edge Bistro.

Alastair is working closely with Gringo and Big Lou’s Butcher Shop to present a multi-course “Flavours of Sinaloa” rooftop dinner which will highlight flavours and dishes authentic to this West Coast Mexican state. The feature dishes include Aguachile, recently named the “Cultural Dish of Sinaloa” along with a traditional Sinaloa-style slow-cooked pork and Jicama Shrimp Tacos.

Dinner will be served in a special Gastown rooftop location at 8pm, Monday  July 21st, Tuesday July 22nd, Thursday July 24th and Friday July 25th. The five-course dinner costs $75 per person including paired cocktails and wine. Email xtina@gringogastown.com to reserve.

Flavours of Sinaloa Menu

Avocado and Melon soup infused with ginger and mint

Aguachile: Fresh shrimp marinated with cucumber lime and cilantro served on a bed of escabeche of sweet onion, cucumber.

Jicama Shrimp Tacos: Capeado style shrimp tacos prepared with coconut rice flour served on jicama tortillas and finished with shredded cabbage and shaved radishes and a roasted tomato salsa with chili ginger and agave syrup.

Chilorio Pork Shoulder: Mazatlan style pork, slow cooked and smoked with traditional accompaniments

Roasted pineapple tamales with coconut ice cream
