Snuggled between the borders of France and Tuscany, on the edge of the Ligurian Sea lies the picturesque and historically significant region of Liguria. Beautiful beaches, towns that tumble to the sea and the surrounding Alps and Appennines mountain ranges do not leave much room for agriculture. However an abundance of wild greens, herbs, and fresh and preserved vegetables flavour the imaginative cuisine which draws its inspiration from sailors craving the freshness not found when out to sea. Liguria is also famous for the creation of basil pesto and ravioli. Executive Chef Neil Taylor’s Liguria menu features all there is to love about this extraordinary region.
Executive Chef Neil Taylor’s showcase menu of Liguria includes:
pissaladeire-focaccia with onions, olives and anchovy
fritto misto-halibut, artichokes, squid, anchovy, sage and lemon
fazzoletti with pesto, green beans, potatoes and pecorino
rabbit braised with taggiasca olives, pine nuts and rosemary
fried custard squares
Wine Director and General Manager Steve Edwards will also be on hand to offer wine suggestions to match these unique dishes.
