  • Santé at The Fairmont Sonoma Mission Inn & Spa – With the recent honor of earning a well-deserved Michelin star, Santé’s national reputation continues to grow. Executive Chef Bruno Tison joined the Fairmont Sonoma team five years ago from sister property, New York’s famed Plaza Hotel. A 15-year veteran and the youngest appointed Executive Chef at the legendary Plaza, Tison’s nouvelle cuisine has earned extensive critical acclaim. During his tenure in New York, he captured a number of awards including FOOD ARTS “Silver Spoon”, a gold medal at the NY International Food Show Exposition and first prize at the NYC Hotel & Motel Culinary Olympics.  

 

  • Haerlin Restaurant at Fairmont Hotel Vier Jahreszeiten – Haerlin Restaurant is one of the leading gourmet restaurants in Hamburg, with 17 points from Gault Millau and one Michelin star. Head chef Christoph Rüffer’s original creations of Mediterranean and French cuisine are prepared exclusively with fresh market and seasonal products. Head sommelier Hagen Hoppenstedt, who was named Sommelier of the Year 2009 by Gault Millau, assists guests in choosing from among 35,000 wine bottles for that perfect vintage to complement any meal.
  • Waterlot Inn at Fairmont Southampton – The Waterlot Inn is Bermuda’s legendary waterfront destination, which started off as an Inn and smuggler’s haven before attracting travelers such as Mark Twain, Eleanor Roosevelt and Eugene O’Neill.  Although the restaurant has been offering spectacular sunsets and authentic Bermudian fare for over 320 years, it’s still an island favorite judging by its numerous awards and buzzing atmosphere.  The Prime Steak is reputed to be the best on the island and the beautiful outdoor terrace is the perfect spot to linger over cocktails.

 

  • The Georgian at The Fairmont Olympic Hotel, Seattle – The Georgian, now celebrating its 20th year rated as a AAA Four Diamond restaurant, is a Pacific Northwest landmark featuring French-inspired Northwest cuisine prepared by Executive Chef Gavin Stephenson.   • Sensing at Fairmont Battery Wharf, Boston – Renowned Chef Guy Martin, who has a prized Michelin star to his name, developed the chic restaurant Sensing for Fairmont Battery Wharf earlier this year. Sensing’s Chef de Cuisine Gerard Barbin was recently named Boston Magazine’s Best Up-and-Coming Chef for his inspired menu of contemporary French cuisine and to top it off, the restaurant also boasts a AAA Four Diamond rating.  Sensing manages all of this by bringing the culinary spirit of Martin’s restaurant in Paris to the Boston Waterfront, by using seasonal New England ingredients, complemented by flavors and spices from around the globe.

 

  • Frankie’s and Marco Pierre White Steakhouse & Grill at Fairmont Bab Al Bahr – Former three star Michelin Chef Marco Pierre White, one of Britain’s first celebrity chefs, has opened Frankie’s and Marco Pierre White Steakhouse & Grill at Fairmont Bab Al Bahr, making them the newest additions to Abu Dhabi’s burgeoning culinary scene. Frankie’s, a collaboration between famed horse jockey Frankie Dettori and Chef White, started in London with much fanfare with its authentic Italian cuisine and casual atmosphere. At Marco Pierre White Steakhouse, White’s first outside the UK, guests can experience an eclectic combination of innovative grilled cuisine and classic English fare, accompanied by one of the largest wine selections in the city.

 

  • Yi Feng Court at Fairmont Yangcheng Lake – Guests at the brand new Fairmont Yangcheng Lake in Kunshan, China can partake in exquisite Cantonese cuisine prepared by Chinese Master Chef Jack Li at the elegant Yi Feng Court. Chef Li, who was named one of the top 10 Asian chefs in 2008 by the China Hotel Association, will present tempting set menus for both lunch and dinner at this exciting new restaurant. In addition to featuring his signature Abalone Cuisine (featuring high-end sea snails), Chef Li also incorporates local favorites into his menu, including another of China’s famous delicacies, hairy crab, found in Yangcheng Lake.
  • BOURBON STEAK at Fairmont Scottsdale and The Fairmont Turnberry Isle Resort & Club – Two-star Michelin chef and James Beard award-winning Michael Mina is behind the outposts of BOURBON STEAK at Fairmont Scottsdale and Fairmont Turnberry Isle Resort & Club in South Florida. Using only corn-fed, all-natural meat and line-caught seafood, the mouthwatering beef, poultry, and fish are all slow-poached and grilled for an ambitious menu that has created a buzz in both destinations. An array of side dishes include duck fat fries, bacon creamed spinach, mushroom pot pie with Gruyere cheese and a potato puree trio — a dish comprised of three versions of whipped potatoes – accented with lobster, sour cream and onion and horseradish.

 

  • Essence at Fairmont Yangcheng Lake – For Pan-Asian cuisine spanning Korea, Indonesia, Malaysia, Viet Nam, Japan and China, the new Essence restaurant at Fairmont Yangcheng Lake in Kunshan, China is superb. Executive Sous Chef Steven Liu recently received the Chef of the Year award from one of China’s top television programs, You are the Chef, at their third annual awards banquet. Selected from a group of China’s top culinary talents, Chef Liu was handpicked for the honor by Grand Hotels Magazine, Sina.com and votes from viewers. The all-day dining venue offers spectacular views of Yangcheng Lake with cuisine that is equally impressive.

  • FIG Restaurant at Fairmont Miramar Hotel & Bungalows – The L.A. Times calls FIG “a raging success” and L.A. Confidential praised the restaurant’s “simply prepared items with a focus on flavor and quality.” Headed by Chef Ray Garcia, FIG features fresh local and organically grown ingredients straight from the Santa Monica Farmer’s Market. To whet diners’ appetites and emphasize his seasonal commitment, Chef Garcia lists the ingredients he uses on the menu under “Just Arrived,” “In Peak Season,” and “Coming Soon.”
  • Oru at Fairmont Pacific Rim – Little did David Wong realize that when his macaroni and cheese dish won the grade eight “Best Cook Award” it was a telltale sign of great things to come. Twenty-five years later, he represented Canada on the international cooking stage at the world’s most prestigious culinary competition – the Bocuse d’Or, and is now top toque at the new Fairmont Pacific Rim.  Executive Chef Wong leads Oru, a Pan-Asian bistro featuring a harmonious fusion of east and west flavors, local purveyors and products and one of the largest sake cellars in the city.
  • Plaza Market Café at Fairmont Singapore – For an authentic taste of Singapore, The Plaza Market Café offers guests the delicious result of the city’s intermarriage of Chinese and Malay culture: Peranakan cuisine. Usually found in the city’s famous Hawker Centers, Fairmont Singapore has taken the unique step of bringing this local favorite to guests.
