Oyama Sausage Cassoulet with Beaujolais Noveau

Celebrate Cassoulet and Beaujoulais with Oyama Sausage this month. (The following products are purchased separately, as accompaniments – Duck Confit, Toulouse Sausages and Parisienne a l’ail – a garlicky cooked sausage which is sliced thick and laid on top.) Oyama will also be releasing their own wonderful Jambon de Bayonne.  This lovely ham has been aging in Oyama’s amazing ham room for over a year.  Good things take time and this is areal winner.

And newthis year, Oyama Sausage is offering a form for 10 – a giant tray with all the fixings, great for a Cassoulet party. This tray offers enough cassoulet to feed hearty appetites and includes Duck Confit, Toulouse Sausage and Parisienne a l’ail, all for $180.00. Cassoulet is a delicious French bean stew, made from white beans, various smoked meats and herbs, cooked slowly in a wonderful homemade stock and is traditionally served to mark the arrival of Beaujoulais Nouveau. And while the wine is very new and does not take much time to hit the glass, the preparation of cassoulet takes 2 days and lots of love. Oyama affords timesavings by preparing the meal for you. To kick things up a notch, after re-heating the cassoulet, finish with a dollop of Beurre de Gascogne, a condiment made of duck fat, parsley and tons of garlic. Add a glass of wine, some fabulous French bread and voila, the party begins.
