On Monday July 19th you can!

Be part of a private cooking lesson for eight, plus dinner with db Bistro Moderne’s Chef de Cuisine Nathan Guggenheimer. Share inspiration and a professional kitchen with a Daniel Boulud trained, world-class chef.

Rendezvous with Nathan in the Lumiere kitchen (next door to db Bistro) at 4:30pm on Monday, July 19th. Lumiere is closed Mondays for private parties, so you and seven others will have the kitchen, and Nathan all to yourselves.

Classes are hands-on and participants learn techniques they can master easily and use at home.

db Bistro Moderne Vancouver is pleased to announce the continuation of special Dine Out Vancouver prix-fixe pricing, all summer long. “It was an easy decision for us,” comments General Manager Chris González. “Our loyal clientele asked, and we answered with an enthusiastic commitment to continue the $38 and $28, three-course, prix-fixe menus we originally created during the popular Dine Out promotion.”

Nathan Guggenheimer has been busy in his db kitchen, since he assumed his new role as Chef de Cuisine last month. “Like all of Daniel’s great chefs, Nathan wants to see guests enjoy the full three course experience, so together we decided to continue the prix-fixe party right through the summer – even out onto the outdoor patio when it opens in June”, continued the restaurant’s general manager.

Db Bistro Moderne Vancouver and sister restaurant Lumière have more reasons to celebrate than just a successful spring season. Partner – Chef Daniel Boulud, whose impeccable standards and culinary vision direct the two Vancouver restaurants, just received two important culinary awards for his namesake Manhattan restaurant. DANIEL was recognized with a prestigious James Beard Award for ‘Outstanding Restaurant’. Each year the latter goes to only one restaurant in the United States that serves as a national standard-bearer for consistent quality and excellence in food, atmosphere, and service. Candidates must have been in operation for at least 10 or more consecutive years.

Barely two weeks earlier DANIEL, was ranked number eight in Restaurant Magazine’s list of the “World’s 50 Best Restaurants”. This placed DANIEL among the only three United States winners included among the top ten. Both accolades come in the wake of DANIEL having earned the prestigious three star rating in the 2010 Michelin Guide. Only five New York City establishments share that honour.

Db Bistro Moderne and Lumière co-owners David and Manjy Sidoo are of course very pleased for their partner Daniel Boulud. “We couldn’t be happier for him and his Dinex Group team, and we are extraordinarily proud that he chose to partner with us here in the great culinary city of Vancouver. We join the entire culinary community and our clients, in congratulating Daniel on his continuing successes. We invite everyone to experience that same exceptional cuisine and attention to detail here at Daniel’s Vancouver restaurants, Lumière and db Bistro Moderne, ” says David.

Chris González invites patrons to join in the celebrations and partake of the regular a-la-carte menus, or sample the continuing $38 and $28 prix-fixe menus. “Returning Dine Out clients will see changes to the menu as the season progresses, so they can continue to benefit from the special pricing and enjoy a varied menu.”

To kick things off, Chef Guggenheimer suggests a $38 dinner menu including choice of: Soup du Jour, or Country Pork Terrine ‘Grand-Père with wild mushrooms, English relish and housemade pickles, or Spring Salad with beet carpaccio, mesclun, shaved crudité and hazelnut dressing; followed by Rock Hen Duo with spaetzle, asparagus and sweet and sour jus, or Bouillabaisse Provencal of BC spot prawns, squid, halibut and garlic rouille, or Roasted Potato Gnocchi with sugar snap peas, tomato confit, and meyer lemon hollandaise; and finished with Bittersweet Chocolate Bar with chocolate crémeux and raspberry sorbet, or Tarte au Citron with almond sweet dough, milk foam and cassis sorbet, or Rhubarb Sundae of oat crumble, vanilla ice cream and ginger foam. And of course, optional pairings of gorgeous BC and other wines, are suggested by Sommelier Kevin Van Hullebush . Three-course prix-fixe dinner $38, lunch $28. Prices do not include tax and gratuity.

About db Bistro Moderne

db Bistro Moderne, Vancouver, is a new, west coast interpretation of Daniel Boulud’s famous db Bistro Moderne in New York, but promises the same urban vibe, dynamic atmosphere, and modern French bistro cuisine as her east coast namesake. db Bistro Moderne is a contemporary Canadian bistro where traditional French cuisine meets the fresh-picked, just-caught flavours of British Columbia. Chefs Daniel Boulud and Nathan Guggenheimer offer a seasonal menu highlighting the quality of fine ingredients served in a convivial and casual setting. The result is a truly contemporary French Bistro experience, unrivaled in the city. Classic French Bistro affairs like Jazz Nights and Wine Dinners transport guests to another place and time and overwhelm the senses with all that is fun and delicious.

For more information regarding extended Dine Out inspired pricing, and an ever-changing menu of complimentary and/or feature items offered in celebration, visit the events pages of the db Bistro Moderne and Lumière websites at www.dbbistro.ca and www.lumiere.ca, or contact General Manager Chris González at 604.739.7115

Rich red berry fruit, blueberry, black cherry, sweet fruit aromas with a hint of white pepper. Rich and mouth filling, this wine finishes with a hint of sour cherry and lingering finish.
Platinum Pinot Noir 2006: Barrel aged in a combination of new and one year old French oak with minimum intervention prior to racking. IMedium ruby red in colour with aromas of cherry, coffee, mocha and spice. A medium bodied wine with silky tannins and balanced acidity.

Chef Daniel Boulud, in Vancouver to help his Canadian culinary team welcome the world to db Bistro Moderne (Vancouver) and Lumière restaurants, was invited up Grouse Mountain to demonstrate Olympic Cooking ‘Vancouver Style’ for NBC TODAY Show co-anchor Meredith Vieira, as part of the network’s Olympic coverage. Chef Daniel MacKay of Lumière and Chef Stephane Istel of db Bistro Moderne helped Boulud prepare signature dishes for Meredith and a small group of on-looking early risers. Though cooking isn’t a recognized Olympic sport, the three white-gloved chefs did somehow manage to hold gold, silver and bronze medals – if only briefly, before heading back down the mountain and into their kitchens.

Db Bistro Moderne Vancouver and Lumière co-proprietors Daniel Boulud and David and Manjy Sidoo play host to the world these next two weeks as organizers, officials, celebrities and athletes celebrate the games and Vancouver’s legendary cuisine at their adjoining West Broadway restaurants.

“We’ve been working for over a year with corporate and destination management groups building unique culinary experiences and components for a whole range of their clients,” says David Sidoo. “The combined offering of world-class chefs like Daniel Boulud, Dale MacKay and Stephane Istel, and two adjoining but distinctly different restaurants, was particularly appealing to organizers. Daniel and his New York based Dinex Group are seasoned veterans when it comes to delivering once-in-a-lifetime culinary adventures, and together we are proud to do what we can here at db Bistro and Lumière to build on Vancouver’s already sterling reputation as a world-class food city.”

To accommodate Olympic visitors and regular customers, db bistro Moderne and Lumière are open extended hours for the duration of the Olympics, and Lumière has opened for lunch. “Of course we are thrilled to welcome the world, but we want to be able to accommodate our loyal regular customers when they call to reserve,” adds General Manager Chris González.

To view the NBC TODAY Show segment in its entirety and view or download Chef Bould’s recipes for the two dishes demonstrated – Cornmeal-crusted Qualicum Bay scallops with apple truffle coleslaw, brisket, parsnip puree, scallop jus; and classic Alsatian Choucroute visit the NBC Video Player

For more information regarding db Bistro Moderne Vancouver or Lumière, or to inquire about Olympic hours, menus and reservations, please contact General Manager Chris González at 604.739.7115 or visit the websites at www.dbbistro.ca and www.lumiere.ca

db Bistro Moderne, Vancouver, is a new, west coast interpretation of Daniel Boulud’s famous db Bistro Moderne in New York, but promises the same urban vibe, dynamic atmosphere, and modern French bistro cuisine as her east coast namesake. db Bistro Moderne is a contemporary Canadian bistro where traditional French cuisine meets the fresh-picked, just-caught flavours of British Columbia. Chefs Daniel Boulud and Stephane Istel offer a seasonal menu highlighting the quality of fine ingredients served in a convivial and casual setting. The result is a truly contemporary French Bistro experience, unrivaled in the city. Classic French Bistro affairs like Jazz Nights and Wine Dinners transport guests to another place and time and overwhelm the senses with all that is fun and delicious.

Classical French dishes like Alsatian Pate en Croute, Coq au Vin, Charcuterie, Cassoulet de Toulouse, and Tarte Fine Provencal, are offered alongside an ever-changing menu of contemporary local dishes like Quadra Island Mussels served Espagnole, Seared Arctic Char, and Dungeness Crab Cakes. And of course, the famous ‘New York db Burger’ is a perennial favourite at db Bistro Moderne Vancouver.

Lumière is a one of just three Grand Relais & Chateaux class restaurants in Canada, one of 160 in the world. Lumière is Daniel Boulud’s second gastronomique restaurant – one he describes as “a dream come true for every chef … a 45-seat jewel box.”

With its provocative blend of European sophistication, modern French sensibilities and west coast innovation, Lumière cuisine speaks a language all its own. Chefs Daniel Boulud and Dale MacKay have captured the imaginations and palates of fine food lovers from all over the world. The beautiful, newly renovated room with its intimate scale and plush, voluptuous proportions, reintroduces Vancouver to one of its best-loved culinary destinations.

Executive Chef Dale MacKay is one of Canada’s best new Chefs, who came to Lumière from the kitchens of the famed Gordon Ramsay restaurants in London, Tokyo and New York. Lumière enters its second decade in Vancouver with a remarkable new partnership with Daniel Boulud and his Dinex Group. Based in New York City, Daniel is committed to a continued presence in the Lumière and db Bistro Moderne Vancouver kitchen, both in person and in daily consultation with his chefs.

“We introduced db Bistro Moderne and re-introduced Lumière to Vancouver just over one year ago, during industry-challenged times and to the most discerning group of diners the city has seen in over a decade. The 2010 ZAGAT survey results certainly direct all credit where it is due – to our world-class Chefs Daniel Boulud, Dale MacKay and Stephane Istel, and to our incredible restaurant team.”

ZAGAT restaurant ratings are consumer survey-based, and focus on three easily digestible categories, namely food, décor and service. Each category is assigned a numeric rating from one to 30, with 30 representing perfection. An average cost per cover is assigned, and a short encapsulating paragraph delivers the overall experience to the uninitiated in 100 words or less.

The Grand Chef Relais & Chateaux class Lumière restaurant captured a heady 26, 23 and 25 rating points respectively, with an average cost per person, including wine, of $108. The cumulative commentary began, “Those seeking a sublime, divinely decadent experience make the pilgrimage to owner Daniel Boulud’s warm inviting, modern West Side destination French, where the epitome of Vancouver fine dining is exquisite, yet as understated as the name and enhanced by attentive, not intrusive service…”

The new db Bistro Moderne Vancouver received 23, 22 and 22 points respectively, with an average cost per person, including wine, of $61 CAD. More meaningful however than the numbers is the introduction: ”Owner Daniel Boulud knows his stuff say fans, calling the vaunted db Burger a must try at this glamorous, well-cloned outpost of the Manhattan original that brings a definite New York vibe to the West Side with its bistro twists on French classics…”

Less than one week ago, db Bistro Moderne Vancouver announced receipt of AAA/CAA’s (Triple A’s) Three Diamond rating for outstanding cuisine, service and restaurant concept – a noteworthy achievement for a brand new restaurant.

“We will continue to work hard to earn the continued trust and loyalty of our clients and our critics, most particularly as we welcome the world this month during the Vancouver 2010 Winter Olympic Games,” adds Sidoo.

“We are just thrilled to be awarded three diamonds already,” says David Sidoo. “The rating validates the confidence that Daniel and Manjy and I had in the db Bistro concept for this market, and theenthusiasm with which our clients have embraced Daniel Boulud and Chef de Cuisine Stephane Istel. Daniel, Manjy and I wish to thank our outstanding restaurant team and our loyal clients, for an excellent first year.”

To receive an AAA/CAA (Triple A) Three Diamond rating a restaurant must meet specific criteria regarding the skill level and professionalism of Chefs and management, authentic mastery of traditional and contemporary cuisine, consistent delivery of an identifiable concept, individualized and refined service, restaurant comfort and décor, and overall packaging of a distinctive concept.

db Bistro Moderne, Vancouver, is a new, west coast interpretation of Daniel Boulud’s famous db Bistro Moderne in New York, but promises the same urban vibe, dynamic atmosphere, and modern French bistro cuisine as her east coast namesake. db Bistro Moderne is a contemporary Canadian bistro where traditional French cuisine meets the fresh-picked, just-caught flavours of British Columbia. Chefs Daniel Boulud and Stephane Istel offer a seasonal menu highlighting the quality of fine ingredients served in a convivial and casual setting.

Interior settings adapt the db Bistro Moderne New York experience – a contemporary spin on classic French bistro dining – to its new Vancouver setting, a city that marries sophistication with a relaxed, West Coast outdoors lifestyle. At the rear of the space is a 20-seat private dining room.

Chef de Cuisine Stephane Istel, a Daniel Boulud protégé from New York, reigns supreme in his Vancouver kitchen. Stephane’s Alsatian-inspired menus showcase Pacific Northwest ingredients, classic French techniques, and New York haute cuisine. The result is a truly contemporary French Bistro experience, unrivaled in the city.
