Celebrated Bartender Becomes First Woman to Claim Prestigious Title and Opportunity to Represent Canada in Global Finals in Cape Town, South Africa

Our Vancouver bartenders are rocking it lately. From PR News – It’s been a banner year for Lauren Mote, as the Bittered Sling Bitters co-proprietor and UVA Wine & Cocktail Bar manager was just crowned the 2015 Canadian Bartender of the Year in Canada’s biggest and most celebrated bartending competition, Diageo World Class Canada.

Hot on the heels of her Bartender of the Year award at the Vancouver Magazine Restaurant Awards in April 2015, Mote becomes the first woman to win the coveted Diageo World Class Canada Bartender of the Year title, and only the second woman to compete at the national level (alongside her close friend and peer, Danielle Tatarin, of Vancouver’s The Keefer Bar).

Held June 22 to 24, 2015, the nationwide Diageo World Class competition welcomed 10 of Canada’s top bartenders to Chicago, IL to compete in seven gruelling challenges over three days. Testing their knowledge, skill, speed and showmanship behind the bar was a panel of 12 influential bartending and spirits experts: Charles Joly, Dale DeGroff, David Nepove, Dennis Tamse, Jacques Bezuidenhout, Jeff Bell, Jim Meehan, Julie Reiner, Ricky Gomez, Steve OlsonTony Abou-Ganim, and last year’s Canadian champion, Grant Sceney, of Vancouver’s Fairmont Pacific Rim.

The competition kicked off on day one with the “Ode to the Windy City” challenge, where Mote developed a super hero pop-up book featuring hospitality workers as the heroes of their community with the host city, Chicago, as the backdrop.

On day two, the finalists competed in two challenges, “Sensorium” and “The Tasting Menu,” which paired cocktails and food, as well as a written exam and blind taste test. Mote cleverly won the Sensorium challenge with an elaborate sensory experience of her whisky-based cocktail, “Loup-Garou” (“werewolf” in French), set to a live trio of French hornists playing Sergei Prokofiev’s iconic Peter and the Wolf.

On the last day of the competition, the “Local Goes Global – Ketel One Market Basket Challenge” saw Mote make two cocktails: “Equinox” (lemon balm-infused Ketel One Vodka, Antica Formula Carpano Vermouth, black garlic-honey cordial) and “Fleur-de-Lis” (Ketel One Citron Vodka, spearmint-infused Cocchi Americano, black pepper-rhubarb shrub, rhubarb-ginger preserves, carbonated water). In the “Cocktails Against the Clock” speed round, Mote’s storytelling continued when she made six cocktails in eight minutes, all centered around the Soo Line, an underground system of tunnels connecting Moose Jaw, SK and Chicago, IL during the building of the Canadian Pacific Railway.

Said judge Abou-Ganim of Mote’s performance: “She was simply amazing — she owned it! It was something to behold.”

Mote’s road to Chicago began in May, when she presented her cocktails “Kid Video” and “Au Lieu de Ski” at the British Columbia regional finals, held at Vancouver’s Boulevard Kitchen & Oyster Bar. As the 2015 Canadian champion, Mote will travel with Sceney to Cape Town, South Africa for the Diageo World Class Global Finals from Aug. 28 to Sept. 5, 2015 where she will not only represent Canada against the world’s best bartenders from an unprecedented 57 countries, but female bartenders everywhere.

“I cannot begin to express how amazing this feels,” says Mote, who just returned from Montreal and Toronto where she hosted a series of educational cocktail seminars, and will soon travel to New Orleans for Tales of the Cocktail® 2015. “To simply compete amongst my incredibly talented friends and colleagues was an honour, but to win is an absolute privilege.”

Four Seasons Hotel Vancouver and YEW seafood + bar are thrilled to launch the Oceans Program, a global approach to cocktails that honours the world’s five unique oceans and the earth’s many waterways. The new program, which dovetails seamlessly with YEW’s highly successful sustainable seafood focus, is the result of an exciting collaboration with internationally-acclaimed cocktail innovator, Lauren Mote.

Drawing inspiration from the Atlantic, Indian, Pacific, Arctic and Southern oceans, the one-of-a-kind Oceans Program divides 16 original cocktails into four categories designed to complement YEW’s bar, lunch and dinner menus: bright aperitifs for lighter seafood, full-bodied seafood, digestives for heavier protein and regional expression.

“My focus was to create a custom cocktail program that pays tribute to Chef Ned’s determined approach to seafood, while also offering guests a unique and educational way to pair cocktails with food,” said Mote. “Now there’s a drink for every menu, meal, conversation and celebration.”

From historical context to flavour composition, the cocktails are intellectual, complex and engaging. Some early favourites include: the Atlantic Ocean’s

Glacial Snout, celebrating herbaceous moss and smoky peat fires; the Pacific Ocean’s Skookum-Chuk, guiding guests into waters and cultural influences close to Vancouver; the Indian Ocean’s Dhou’s Route, decadently showcasing the historic global spice routes and island influences; and the Arctic and Southern Oceans’ exotic 12 Apostles, delivering a silky palate and burst of flavour.

A highly-respected educator and bartender, Mote has shaped the way Vancouver views and consumes cocktails through her innovative training and consulting programs. As part of the collaboration, Mote also worked with the YEW bar team to introduce new skills, broaden understanding and fuel their passion for beautifully crafted cocktails.

The new Oceans Program cocktails are now available at YEW seafood + bar and will be crafted by YEW’s passionate team of bartenders.

YEW seafood + bar’s own top toque, Ned Bell and lead bartender, Justin Taylor play host for this ‘mix and match’ multi-course event.

Joining Ned and Justin in this fun and friendly collaborative are West Restaurant + Bar‘s celebrated Executive Chef Quang Dang and award-winning mixologist David Wolowidnyk, as well as internationally-acclaimed Bittered Sling proprietors Jonathan Chovancek and Lauren Mote.  All offering premiere experiences to Vancouver diners and imbibers, YEW, West and Bittered Sling make up a fierce collection of Vancouver’s brightest culinary masters.

The concept of cocktail and food pairings has become extremely popular, and since 2010, Lauren Mote’s original “Cocktail Kitchen” competition at The Refinery produced energetic statistics: 168 original cocktails produced, 56 bartenders invited, 224 bottles of spirits poured, 14 different sponsors. This city’s brightest bartenders – a collaboration of seasoned veterans and young apprentices – took their place behind the wood and produced magic for 1680 total guests in 14 months.

We are proud to introduce you to “Bittered Sling Bistro” – a bi-monthly food and cocktail pairing competition, using a special featured spirit(s), dedicated to pushing the boundaries of cocktail craft presented at the beautiful Legacy Liquor Store in Olympic Village, Vancouver. Schedule – Spirit and host bartender schedule will be online through Kale & Nori and the Legacy Liquor Store events page. Tickets will be available one month in advance. This program runs from November – April 2012 twice monthly on Tuesdays.

Prizes – each host bartender receives a prize to participate; each host bartender is eligible to win one of two spots in the finals (one night), May 2012. Grand prize for winning host bartender will be announced in early 2012.

Kale & Nori co-owner Lauren Mote has been an intricate part of the food and beverage industry for over 12 years. Spanning her knowledge and enthusiasm between Toronto and Vancouver, she has devoted her expertise to Le Select Bistro, Lumiere, Goldfish Pacific Kitchen, Hawksworth Catering and Chow Restaurant. From 2009-2011, Lauren has been behind the critically-acclaimed cocktail program at The Refinery, having written over 20 lists, and 240 contemporary cocktails using at least 50% homemade products like bitters and fermented sodas. She’s also the founder of the Cocktail Kitchen Series, Vancouver’s largest and longest running cocktail and food pairing competition, now heading into it’s third season. As a certified Sommelier and award-winning Mixologist, Lauren is able to provide an innovative and unique service for Kale & Nori clients. Being one of Canada’s foremost mixologists, Lauren continues to shape the way Vancouver consumes cocktails. Several of Lauren’s award-winning cocktails are developed using avant-garde mixology, “tasting note” deconstruction, and culinary theory. Lauren is also an accomplished writer, and Director for the CPBA – The Canadian Professional Bartender’s Association (founded 2010).

Kale & Nori co-owner Jonathan Chovancek has over 16 years experience cooking across Canada in such award-winning, ingredient-driven restaurants as the Relais & Chateaux Aerie Resort, Sooke Harbour House, Eigensinn Farm, Avalon, Zambri’s, and King Pacific Lodge. From 2005-2011 Jonathan was Chef de Cuisine at Culinary Capers Catering, Vancouver’s most prestigious catering company. Here, Chef Jonathan was responsible for the development and execution of its cuisine and creative menu development. During the 2006 and 2008 Olympic Games, Jonathan led Culinary Capers teams to Torino and Beijing respectively, where he earned rave reviews from a discriminating international clientele on both occasions. Of course, his skills were in full force throughout Vancouver’s 2010 Olympic Games. Over a two-week period, Culinary Capers served an incredible 59,279 people at 578 events. Two months later, Jonathan’s food and wine pairing skills won the top prize at the the 2010 Vancouver Playhouse International Wine Festival Vintner’s Brunch. As one of the Vancouver’s top catering chefs, Chef Jonathan is sought out as an expert speaker and instructor – teaching thousands about catered arts in Las Vegas for the past 6 years at the Catersource – International Caterers Association conference. 2010 saw Chef Jonathan as the expert chef/host on CBC’s ground-breaking documentary, Village on a Diet, which was watched by over a million people weekly from coast-to-coast. Jonathan has contributed recipes to the best selling OceanWise Cookbook, B.C. Almanac, Popler Grove Winery and CBC’s Live Right Now national campaign for promoting healthy lifestyle. Jonathan is a regularly featured guest on CityTV’s Breakfast Television as well as CBC’s Steven & Chris Show. Cocktail Kitchen : Season Two, “Morocco” VS Cointreau

The Refinery and Cointreau (Select Wines) proudly present the sixth installment of Cocktail Kitchen : Season Two, “Morocco” VS Cointreau, coming August 2011. This is the final month of qualifications for bartenders before the finals begin in September. This is also the final season of Cocktail Kitchen.

This weekly series promotes creativity and innovation within the realm of restaurant bartending. Now celebrating our one year anniversary, the Cocktail Kitchen Series has moved 30 unique bartenders through the competition as they play host to a sold out crowd on their designated date. Every Wednesday throughout August, a different bartender will attempt to pair three courses with three cocktails*. Sounds simple enough for the average bartender, but rest assured that you’ll need more than charm and a sparkling smile to wow this crowd!

About The Cocktail Kitchen Series:

The Cocktail Kitchen Series is the brain-child of The Refinery’s head bartender, Lauren Mote. Each month, a different spirit sponsor takes the reigns. Each month’s menu is designed its around regional fare, with a distinctly west-coast spin. Bartenders are selected to compete based on their enthusiasm, and dedication to advancing their bartending careers beyond the wood. This program has seen at least 40% apprentice bartenders, or those with less than 2-3 years experience in the industry. We have used this as a means to develop one of the largest apprentice bartending competitions in British Columbia. Both fun and innovative, the Cocktail Kitchen Series allows bartenders to take the feature spirit and create three different cocktails that pair to a simple yet challenging menu. Presentation and perception is everything as bartenders present their pairings to a sold out room of media, peers and patrons with ballots. At the end of the month, the winning bartender will have a chance to compete in the showdown after 6 months, where the 4 highest scoring bartenders are invited back with a clean-slate and a new set of food and spirit challenges.
