About Dame Wines

Sommelier Mireille Sauvé capitalized on a local abundance of female talent and, leading a group of BC’s most wine-savvy women, recently launched the province’s newest wines; Dames White 2015 and Dames Red 2013, with 100% of the profit going to fund women’s education in the fields of food and drink. The wines have now hit the shelves in BC’s top private liquor stores and are featured on restaurant lists throughout the province so that consumers province-wide can #drinkforacause!

Sauvé reached out to established women within the industry to source the grapes for the Dames Wine and is using #girlpower right through to the sales channels. Industry pioneer Anne Sperling of Sperling Vineyards runs the vineyard where many of the grapes were sourced, Katie Holmes of Summerhill Winery and Janice Meyer Stevens from Meyer Family Vineyards and tolled alongside Sauvé from the cellar to the bottling line and Kirsten Munro heads up sales in the Okanagan, and these are just a few of the fine women involved in the project.


The 2015 Dames White is a dry, aromatic blend of 80% Pinot Blanc, 10% Riesling and 10% Gewurztraminer. Light-bodied with a lively acidity, it pairs best with shellfish and seafood, especially California Rolls. The 2013 Dames Red is an organic blend of 70% Merlot and 30% Syrah and is a luscious, fruit-forward wine, with flavours of plum and toasty vanilla that complement good cheeses and meats. Both wines are made exclusively from Okanagan Valley fruit and were produced at Meyer Family Vineyards as a custom crush, with Mireille Sauvé as Winemaker.

These wines celebrate the work that women are doing in the province’s wine industry, while providing funds for education for those rising up in the ranks. Sauvé herself was a scholarship recipient through the Les Dames d’Escoffier program where the funds will be channelled, and credits the contribution for allowing her to complete her dream of becoming a Sommelier – in fact Canada’s youngest female Sommelier – graduating from George Brown College in 1997.

520 cases of wine (6,240 bottles) were produced and are selling fast; the wines retail for $25 per bottle, exclusive of taxes, on www.dameswine.com and in private liquor stores and restaurants across BC (prices vary – click here for current list).

Plating Parmigiano With Choices’ Chef Antonio Cerullo and Marquis Wine Cellar

IMG_3780As I just discovered last week, Choices Market in Kitsilano has a hidden event room right behind their flower shop. Complete with a kitchen and more than enough space for few tables, the hideaway is the perfect spot to host a cooking class or wine tasting; the precise reason why I attended.  Charming, and appropriately Italian, Chef Antonoio Cerullo presented Parmigiano Reggiano and some dishes that showcased the king of Italian cheeses.  Marquis Wine Cellar’s Leah Bickford, the store’s Italian buyer, expertly paired wines with our dishes.  IMG_3782

Upon entry we received Prosecco, a non-vintage from Bosco di Gica ($26.90).   A vibrant, fresh and fruity bubble to start the evening off.  Chef Cerullo began preparation on Spinach and Parmigiano Fonduta and I decided to join in and give him a hand so he could entertain the audience while I stirred up the spinach (I have a habit of jumping on the stage,or helping out as I like to think). Italians talk with their hands, and this chef was no different, weaving an entertaining tale as the evening progressed, complete with stories of artificial olive oil (it can NEVER be cheap AND real) and culinary tidbits from his home country. The Fonduta was served with a 2011 Anselmi Soave San Vincenzo ($23.90), an aromatic white with a good concentration of fruit complementing the richness of the dish.




The next course up was a Fennel,  Arugula and Parmigiano Salad, with a 2011 Let Rote Vernaccia di San Gimingnano ($27.90), with a bright  citrus aroma , some floral and mineral notes. A nice luscious wine which managed nicely to complete the course.


I also assisted in stirring up the Cognac-infused Risotto alla Parmigiana, a rich dish full of beefy flavours calling for a wine that could cut through the richness.  Bickford chose a 2010 Antonio Camillo Ciligiolo Maremma Tuscany ($28.90) a fresh, smooth wine with some nice cherry flavours, a wonderful companion to the dish.


For dessert?  Of course cheese and an excellent sweet wine , the 2004 Isole e Olena Vin Santo ($69.90), full of marmalade, toasted nuts, caramel and fig.  Superb!

I’ve included the recipes below.

Risotto alla Parmigiana


750 grams arborio rice

1 cup finely chopped shallots

300 grams freshly grated Parmigiano Reggiano

2 tbsps extra virgin olive oil

1 plus 1 tbsp butter

1/4 cup cognac

3 litres beef stock

2 tbsps finely chopped parsley


In a heavy soup pot on medium high heat 2 tbsps oil and 1 of butter. Proceed to brown shallots. When shallots have browned, add rice, stirring frequently until rice feels hot to touch of back of hand (approx 5 minutes)

Add cognac and stir while it is absorbed.

Start adding hot stock 1 ladle at a time until rice is almost ready. Season to taste keeping in mind that the Parmigiano will add extra salt.  Do not overcook, rice grains should remain “al dente”,  firm on the inside.  Stir in Parmigiano, butter and parsley. Rest for 3-4 minutes and serve.

Fennel,  Arugula and Parmigiano Salad


1 pint cherry tomatoes, cut in half

1 whole fennel bulb, finely sliced

2 cups arugula

10 large kalamata olives, pitted and chopped

1 tbsp balsamic vinegar

1 tbsp freshly squeezed lemon juice

3 tbsps extra virgin olive oil

pinch of salt

1 cup of shaved Parmigiano


Combine all ingredients except for Parmigiano. Toss, plate, and  sprinkle each portion with the shaved Parmigiano.

Spinach and Parmigiano Fonduta


2 tbsps butter

600 grams of spinach

60 grams walnuts

1/8 tsp grated lemon zest

1 tbsp of lemon juice

120 grams Parmigiano

freshly grated nutmeg

pinch of salt


After rinsing the spinach, place in a soup pot and turn on medium heat. The water remaining on leaves from washing is enough to cook the spinach. Move around the spinach while cooking, and 2-3 minutes into the cooking add a pinch of salt. Cook approximately 10 mins. Strain well. In a frying pan heat butter on medium high , and when hot add spinach. Saute’ for a few minutes then add lemon zest and lemon juice. When mass starts looking dry add walnuts, reduce heat to medium – low, and stir in a little at a time, 3/4 of the Parmigiano. Serve immediately with a fresh crouton or piece of baguette. Garnish with remaining Parmigiano.



Chocolate and Wine Dinner at La Cigale French Bistro

To celebrate the start of the New Year, Marquis Wine Cellars is teaming up with La Cigale French Bistro and Chocolate Master, Pierre Gruget, to bring you a very unique wine and food event. The dinner which is on Tuesday, January 22nd will feature a specially created four course menu that is devoted to showcasing chocolate based cuisine at its finest; with each course having been paired with a selection of chocolate friendly wines.

La Cigale French Bistro is Brigitte Raye’s new project which she started in October 2012 after 11 years at the renowned Café La Régalade in West Vancouver. Her son Kevin has joined her as head Chef and he has created an extremely tasty, Provence influenced dining experience. La Cigale is quaint, intimate, and undoubtedly French with a little Je ne sais quoi. Pierre Gruget, certified by the Ecole Chocolat as a Chocolate Master, is French by birth and is a firm believer in enjoying good food, good wine, good company and great chocolate.

Chambar Champagne Dinners

On a more bubbly note…

With the holiday season fast approaching, Marquis Wine Cellars is teaming up with Chambar (www.chambar.com) to bring you two unique Champagne dinners. Guests will enjoy a selection of eight different Champagnes (Rosé, Non-Vintage Brut, Blanc de Blancs, Blanc de Noirs and Vintage) that have been paired with a specially crafted menu from Chef, Nico Schuermans.

Our guests of honour will be Françoise and Paul Couvreur who run the export company, Champagne et Villages, which represents many of the small grower Champagnes in the Marquis portfolio, such as José Dhondt and Bruno Gobillard. Paul is a 5th generation Champenois with extensive experience and knowledge of the Champagne region, having worked for 23 years for two of the major Champagne Houses. He will be on hand to talk about each producer and their Champagnes.
