Following six exhilarating days of deconstruction and mounting anticipation, pop-up restaurant concept One Hundred Days will open it’s doors tomorrow night for a preview of what promises to be 100 extraordinary nights!
Expectations are high and rising as the doors of One Hundred Days prepare to open! In a mere 24 hours, OPUS Hotel Vancouver will host a special media and VIP event before opening to the public for breakfast on Saturday morning. The past week has seen the incredible transformation from traditional French bistro to raw, unpredictable and urbane pop-up eatery.
” The concept of a moment-in-time restaurant arose out of my decision to close Elixir Bistro and develop a fresh and innovative world class restaurant, featuring a new international cuisine, to open in the first quarter of 2011. In true OPUS spirit, I decided to use the transition period between the old and new to do something completely unexpected and unique. The richly experiential, stripped back raw structure of One Hundred Days is in perfect keeping with the creativity and unpredictability that defines the OPUS Brand ” said John deC. Evans, President and CEO, OPUS Hotels.
The talented chefs at One Hundred Days will dish up a tantalizing menu of urban diner meets Mediterranean cuisine, all inspired by the art surrounding them. With choices such as Lobster and Prawn Popsicles and the Kick-Ass Burger, dinner at One Hundred Days is guaranteed to be a unique and adventurous experience!
The décor will be in a constant flux of change at the hands of local celebrity graffiti artist Vince Dumoulin. With the walls at the mercy of his artistic whims, you may think you are in a different restaurant from one week to the next.
One Hundred Days promises to be high energy and the most unexpected and thrilling dining experience to be found in Vancouver. Join us on our journey of 100 exciting adventures.

Peter Girges Unveils RocksGlass Concepts Ltd. Restaurant Group
Peter Girges, the young Vancouver visionary behind the Glowbal Group of Restaurants is at it again and this time launching a new company of restaurants, RocksGlass Concepts Ltd. As the first major move Girges, together with his team announced today they will be partnering with John Evans, President & CEO of the OPUS Hotels Vancouver and taking over the hotel’s food & beverage, including OPUS Bar, Café O and of course the renowned Elixir Bistro.
Shutting down this Friday for a 6-day whirlwind overhaul, Girges and the RocksGlass team will be renovating the Elixir Bistro to insert their own style and complete the partnership. This startling announcement comes just shy of the opening of the first two RocksGlass restaurants independently called Chinois Restaurant, and the other, Pierre’s.
Although construction on Chinois Restaurant and Pierre’s Lounge is still underway, the two highly anticipated restaurants are both slated to open later this fall. Having assembled some of the strongest industry players including restaurant handler and former Glowbal General Manager, Anthony Pratt, EVOKE International Design, as well as an extensive list of high-profile investors; RocksGlass is confident they will exceed expectations.
Peter Girges, the man behind the company, has already earned a reputation for success in the highly competitive restaurant sector. As the other half of the Glowbal Group of Restaurants, he built the original Coast, Italian Kitchen, Sanafir, Trattoria, Glowbal and Afterglow. Even more impressive, at only 31 years of age, this industry veteran has developed a whopping eight successful restaurants, five of which continue to generate well over $30 million annually.
In 2008, after selling his shares in the Glowbal Group, Girges made the decision to branch out independently. “The opportunity was there, and I knew it was now or never,” says Girges. “I have long wanted to re-define hospitality in Vancouver and I believe RocksGlass will achieve just that,” he finished.

It is with regret that OPUS Hotel Vancouver’s General Manager, Nicholas Gandossi, announces the departure of Don Letendre, Executive Chef of OPUS Hotel Vancouver, Elixir Bistro and OPUS Bar. A member of the opening team, Letendre has been with the company for eight years and has made many valuable contributions to its success.
“From the beginning, Don was extremely passionate about the Elixir and OPUS Bar brands, which clearly showed through his professionalism and dedication” says OPUS Vancouver General Manager Nicholas Gandossi. His focus and determination were building blocks for Elixir’s early successes, which allowed the business to grow in other areas, most notably in OPUS Catering. We certainly will miss his leadership and humour, which we have all seen, and come to understand over the past eight years.”
