Dame Mireille Sauve – Dames Wines

Earlier this year Dame Mireille Sauve led a fundraising initiative for Les Dames d’Escoffier BC, by making some dame good wine, and we’ve been drinking our far share of it and have wrapped several bottles up for gifts. Each bottle of #dameswine supports food and beverage education for BC’s dynamic women. The Dames White is a beautiful BC blend of 80% Pinot Blanc from Sperling Vineyard in Kelowna, 10% Riesling from Sperling Vineyard in Kelowna, and 10% Gewurztraminer from Meyer Family Vineyards in Okanagan Falls. The Dames Red can be enjoyed on its own with friends or alongside assorted charcuterie and cheese plates, burgers or stew. Dame Alison Love spreads some OKanagan Love!

Well Seasoned BBQ OFF The Bypass

Bypass bbqGet your tongs, skewers, and smoker racks ready as the 9th annual Well Seasoned BBQ OFF The Bypass event returns Sunday, September 14 from 10am to 4pm at a brand new location (#117-20353-64 Avenue, Langley). The event is free to the public with live music, unique displays, tasty vendors and delicious BBQ samples.

Angie Quaale, owner of the celebrated Well Seasoned gourmet food store in Langley, first introduced BBQ On the Bypass in 2005 as a way to unite grilling enthusiasts to join the quest for ultimate barbeque. Dedicated and creative teams from across North America gather annually in Langley, BC to compete for the best smoking good meat in the following five categories: chicken, brisket, ribs, pork butt, and an open choice. Since 2008, winning teams have qualified to compete in international renowned BBQ competitions such as the Jack Daniel’s World Championship Invitational.

This year, well-respected Kelly and Kathleen McIntosh will serve as the sanctioning representatives from the Kansas City BBQ Society who will oversee the judges that select the ultimate winners. Teams are competing for $5000 in cash and prizes as well as a chance at an invitation to compete in the Jack Daniel’s World Championship in Lynchburg, Tennessee.

With more than 17 teams registered for this year’s competition, Quaale says, “There’s no doubt this year’s annual Well Seasoned BBQ event will be even more smoking hot than previous years. Having a new location off the bypass only means one thing: we are now able to host a full two-day competition and accommodate the fast-growing number of BBQ enthusiasts from all over North America.”

Attracting only the best BBQ competitors from North America, BBQ Off the Bypass is the place to be to for some delicious barbecue and live entertainment before summer wraps up. For those with a sweet tooth, the annual Great BC Bake-Off will also take place with three competing categories: fruit pie, open, and butter tarts.

Making Great Sausages – Sausage 101 with Well Seasoned

Students will meet at Stuffer’s before 11 am. 22958 Fraser Highway Langley (just east of the Langley hospital on the south side of the street)

Reno DeGianni brings years of experience and knowledge from traditional “Old World” methods of Italian sausage making. With his guidance and the students’ participation, this class is meant to capture the basic aspects of sausage making. With the help of the BEST Italian butcher we know we will learn to choose the best cuts of meat, to grind, mix and stuff just like the pros. Many topics will be covered, including the use of appropriate techniques, combining the perfect ingredients, and the importance of maintaining a high level of cleanliness. Learn how to masterfully prepare your own handmade fresh sausages. The procedures and techniques for making a variety of sausage types will be covered, including specifics on:

* Sanitizing

* Seasonings and spices

* Casing, tubing & linking

* Curing and cooking

As well, we will be demonstrating and discussing the equipment required for making sausage, such as the sausage stuffers & meat grinders. Upon completion, you will have practical sausage production knowledge and a basic competency in the professional techniques on how to make three to four varieties of sausage along with some great ideas for cooking them!

This is a hands on class, teaching you practical techniques you will use again & again at home. We can’t think of a better way to spend a Sunday than exchanging experiences with some fellow sausage enthusiasts and we hope you will join us. Oh and come hungry!

Dozens of BBQ pitmasters and their teams from across the Pacific Northwest will set up camp in Langley on Sunday, September 15th for one of the community’s most popular events, the 2013 BBQ on the Bypass. The 8th annual free event has become known as the Lower Mainland’s largest BBQ competition which attracts thousands of BBQ enthusiasts every year who turn out to enjoy the sites, sounds and flavours of a southern style BBQ competition. The event will feature live music, displays, vendors, BBQ samples and family fun.

BBQ teams will be competing for thousands of dollars in cash prizes and trophies, including the title as the BBQ on the Bypass Grand Champions and chance to compete at the Jack Daniel’s World BBQ Championships in Tennessee.  Amateur pie bakers are also being invited to participate in the Great BC Bake Off with prizes provided by Well Seasoned.

The event will be emceed by well known culinary expert, Chef Dez and local rock cover band, OS5 will perform.  Throughout the day and there will be activities for children including face painting and games. The panel of PNWBA certified judges will a include few local celebrities.

Angie Quaale, founder of Well Seasoned Gourmet Foods Inc., is a well know BBQ and culinary expert who has competed in more than 75 international BBQ competitions including 3 times at the Jack Daniels World Invitational BBQ Competition in Lynchburg, Tennessee. Angie is passionate about all food and the people who make it but BBQ is her life.

In 2011 she was named the Canadian BBQ Champion and is the only female BBQ pitmaster from BC. She is also the first head-judge to be certified by the Pacific Northwest BBQ Association in Canada. Angie is the recipient of many awards including the New Business of the Year, and Small Business of the Year awards from the Langley Chamber of Commerce. Her newspaper column runs regularly in the Langley Times.
