Each of them taught me important lessons along the way. The last chef I worked under was Robert Clark, who taught me a great deal about sustainably harvested seafood.<\/p>\n<p><strong>What is your favourite style of cooking?<\/strong><\/p>\n<p><strong><\/strong>I am not one for favorites in the culinary world. I am inspired by so many different styles, it\u2019s difficult to choose just one. I do however embrace my Vietnamese heritage, taking inspiration from my grandmother\u2019s cookbooks!<\/p>\n<p><strong>What is your favourite ethnic cuisine?<\/strong><\/p>\n<p><strong><\/strong>Scottish and Vietnamese, based on on my family background. I unfortunately cannot grow to love haggis.<\/p>\n<p><strong>What ingredient(s) can&#8217;t you live without?<\/strong><\/p>\n<p>Vinegar<\/p>\n<p><strong>What are the most essential tools for cooking?<\/strong><\/p>\n<p><strong><\/strong>Knives, and high quality pots and pans.<\/p>\n<p><strong>Do you have an unforgettable taste combination?<\/strong><\/p>\n<p>All of them, I can\u2019t help but try and be a part of a flavour symphony.<\/p>\n<p><strong>Ingredient you can&#8217;t get enough of?<\/strong><\/p>\n<p><strong><\/strong>Sour cream\u2026for my chips.<\/p>\n<p><strong>Ingredient that will never touch your lips?<\/strong><\/p>\n<p><strong><\/strong>Natto (fermented soy beans)<\/p>\n<p><strong>What is your most prized possession?<\/strong><\/p>\n<p>My cookbook collection<\/p>\n<p><strong>What basic recipe\/s do you advise for cooking novices to learn as a starting point?<\/strong><\/p>\n<p>Vinaigrettes and emulsified sauces<br \/>\n<strong><\/strong><\/p>\n<p><strong>What&#8217;s your go-to comfort food?<\/strong><\/p>\n<p>Chips with sour cream<br \/>\n<strong><\/strong><\/p>\n<p><strong>What\u2019s your favourite cocktail?<\/strong><\/p>\n<p>Gin and tonic<\/p>\n<p><strong>Do you have a guilty pleasure?<\/strong><\/p>\n<p>Beer!<\/p>\n<p><strong>What&#8217;s your definition of a perfect meal?<\/strong><\/p>\n<p><strong><\/strong>Something light and tasty.
