owner Angus An.<\/p>\n<p><strong>What was your first food memory?<\/strong><\/p>\n<p>My mom trying to get me to eat broccoli, she made me plant it like a tree on rice.<\/p>\n<p><strong>What was in your elementary school lunch kit?<\/strong><\/p>\n<p>I got dumplings and fried rice while my friends got p&amp;j sandwiches, people always looked at me funny.<\/p>\n<p><strong>Where did you first learn to cook?<\/strong><\/p>\n<p>I was in grade one when my mom taught me how to fry an egg\u2026.<\/p>\n<p><strong>Did you attend culinary school &#8211; if so, where?<\/strong><\/p>\n<p><strong><\/strong>French Culinary Institute, (FCI) in soho new york<\/p>\n<p><strong>Where has been your favourite place to work to date and why?<\/strong><\/p>\n<p>Restaurant Toqu\u00e9, Normand Laprise believed in freedom in his cooks, and I like to think I benifited from that.<\/p>\n<p><strong>Who in the industry taught you the most? <\/strong><\/p>\n<p>David Thompson<\/p>\n<p><strong>What is your favourite style of cooking?<\/strong><\/p>\n<p>Simplistic, minimal.\u00a0 I like the ingredients to speak for themselves<\/p>\n<p><strong>What is your favourite ethnic cuisine?<\/strong><\/p>\n<p>Thai<\/p>\n<p><strong>What ingredient(s) can&#8217;t you live without?<\/strong><\/p>\n<p>Fish sauce, lemons, limes, butter, good EV olive oil<\/p>\n<p><strong>What are the most essential tools for cooking?<\/strong><\/p>\n<p>Mortar and pestle<\/p>\n<p><strong>Do you have an unforgettable taste combination?<\/strong><\/p>\n<p>Fish sauce and lime juice<strong>.<\/strong><\/p>\n<p><strong>Ingredient you can&#8217;t get enough of?<\/strong><\/p>\n<p>Fresh ones.<\/p>\n<p><strong>Ingredient that will never touch your lips?<\/strong><\/p>\n<p><strong><\/strong>Cockroaches, I can\u2019t do cockroaches.<\/p>\n<p><strong>What basic recipe\/s do you advise for cooking novices to learn as a starting point?<\/strong><\/p>\n<p>Searing meats at medium heat rather than high, low and slow to get the best result.\u00a0 Constant basing with fat.<\/p>\n<p><strong>\u00a0<\/strong><strong>What&#8217;s your go-to comfort food?<\/strong><\/p>\n<p>Any soup noodle will do.<\/p>\n<p><strong>\u00a0<\/strong><strong>What\u2019s your favourite cocktail?<\/strong><\/p>\n<p>Old fashioned<\/p>\n<p><strong>Do you have a guilty pleasure?<\/strong><\/p>\n<p>All of them!<\/p>\n<p><strong>What&#8217;s your definition of a perfect meal?<\/strong><\/p>\n<p>I much rather a perfectly cooked home meal with some good wine among good friends.\u00a0 Food is meant to share, and encourage company.\u00a0 Too often I eat at Michelin starred restaurants by myself, although the food is good but I much prefer a comfortable home cooked meal at home with good friends and good wines.<\/p>\n<p><strong>What do you always have on hand for last minute entertaining at home?<\/strong><\/p>\n<p>Bomba rice and my paella pan.\u00a0\u00a0<strong><br \/>\n<\/strong><\/p>\n<p><strong>How do you unwind after service?<\/strong><\/p>\n<p>A drink or two while I watch the golf network.<\/p>\n<p><strong>Most overrated food trend?<\/strong><\/p>\n<p>No trend is overrated as long as people put the attention and care into what they cook, everything is overrated if they just try to follow a trend or what others are doing.<\/p>\n<p><strong>Favourite culinary destination?<\/strong><\/p>\n<p>Thailand.\u00a0 I would also like to go to Spain.<strong><\/p>\n<p><\/strong><strong>Most memorable meal last year?<\/strong><\/p>\n<p><strong><\/strong>Some friends of mine and I put together this \u201cTuscan\u201d dinner a while back.\u00a0 We had 21 L of wine (7 double magnums) for 25 people, 6 course meal with bisteak Florentine, duck ragu parpadelle, ossobuco tortellini with brodo, grilled tuna panzanella, and a whole bunch of canap\u00e9s.<\/p>\n<p><strong>If you weren&#8217;t a chef what career would you have pursued?<\/strong><\/p>\n<p><strong><\/strong>I like the idea of design and execution.\u00a0 I wanted to be an architect before a chef, so maybe I\u2019ll revisit that.\u00a0 I also see myself as a film director.<\/p>\n<p><strong>What would you eat at your last meal?<\/strong><\/p>\n<p><strong><\/strong>uni ikrua don<\/p>\n<p><strong>Who are you dream dinner companions?<\/strong><\/p>\n<p>My son when he\u2019s fully grown up.\u00a0 Right now he\u2019s a picky eater, but I hope that will pass, my dream is to travel with him the way I travelled, thru restaurants and eating.<\/p>\n<p><strong>What do you do in your off time?<\/strong><\/p>\n<p>Golfing, spending time with my family.<strong><\/p>\n<p><\/strong><strong>Where do you eat in your city when you are not working?<\/strong><\/p>\n<p>Lucky noodle house.<\/p>\n<p><strong>Are there some regional dishes your city is
