A chef for 25 years, Alastair has been based in Mazatlan for the last 8 years, where he runs the highly-regarded Water\u2019s Edge Bistro.<\/p>\n<p>Alastair is working closely with Gringo and Big Lou\u2019s Butcher Shop to present a multi-course \u201cFlavours of Sinaloa\u201d rooftop dinner which will highlight flavours and dishes authentic to this West Coast Mexican state. The feature dishes include <strong>Aguachile<\/strong>, recently named the \u201cCultural Dish of Sinaloa\u201d along with a traditional Sinaloa-style slow-cooked pork and <strong>Jicama Shrimp Tacos<\/strong>.<\/p>\n<p>Dinner will be served in a special Gastown rooftop location at 8pm, Monday\u00a0 July 21<sup>st<\/sup>, Tuesday July 22<sup>nd<\/sup>, Thursday July 24<sup>th<\/sup> and Friday July 25<sup>th<\/sup>. The five-course dinner costs $75 per person including paired cocktails and wine.
