The host chef for the evening is <strong>Ned Bell,<\/strong> Executive Chef Four Seasons Hotel and YEW Restaurant &amp; Wine Bar.<\/p>\n<p>Wine has also played a pivotal role at Bishop\u2019s. As the BC wine industry grew up alongside the restaurant John offered the very best of the local vintages alongside some of the world\u2019s best old world wines,; wines for the evening include Domaine Chandon, Benjamin Bridge, Blue Mountain Estate, Moet Chandon, CedarCreek Estate, Leeuwin Art Series, Mission Hill Family Estate, Spierhead, Poggio al Tufo, Marques de Riscal, Tinhorn Creek, Layer Cake, Painted Rock, Lake Sonoma, Decero, Montresor and Marlborough.<\/p>\n<p><strong>Tickets are priced at $325 and can be purchased at <a href=\"https:\/\/www.eventbrite.ca\/e\/les-dames-descoffier-celebrates-chef-john-bishop-tickets-12354955003?aff=eac2\">https:\/\/www.eventbrite.ca\/e\/les-dames-descoffier-celebrates-chef-john-bishop-tickets-12354955003?aff=eac2<\/a> <\/strong>All funds raised go to support the outreach and scholarship programs of the BC Chapter of Les Dames d\u2019Escoffier, including Project Chef and Growing Chefs.<\/p>\n<p><strong>This year\u2019s theme, \u2018Into the Garden with John,\u2019 pays tribute to John Bishop\u2019s pivotal role in changing the way Canadian chefs prepare meals.<\/strong>\u00a0 Back in 1985, when Bishop opened his eponymous restaurant on West 4th Avenue in Kitsilano, farm-fresh ingredients and the 100-mile diet were no more known than arugula. Ingredients generally came from one giant supplier to restaurants while convenience and processed ingredients were the mainstays of Canadian kitchens.\u00a0\u00a0 Inspired by Alice Waters (Les Dames d\u2019Escoffier member, San Francisco Chapter) in Berkley, Bishop vowed to change that and embarked on a new style of restaurant, one that worked closely with farmers to grow for him and where the menu reflected what was available locally and in season. <strong>He truly was the chef who first sowed the seeds of this city\u2019s culinary transformation.<\/strong><strong>\u00a0<\/strong><\/p>\n<p>Farmers Gary and Natty King, long time suppliers and friends, of Hazelmere Organic Farm and Susan Davidson of Glorious Garnish &amp; Seasonal Salad Company were just some of the collaborators growing for Bishop\u2019s.\u00a0 Fish was from our oceans, beef from local ranches and fruit was preserved at the peak of their ripeness for plates well into the winter.<\/p>\n<p>Without John, fine dining in Vancouver would not be where it is today and where, in 1985, the idea of farm to table dining was literally \u2018ground-breaking\u2019, today it is rare for a chef not to work with local ingredients.\u00a0 <strong>\u201c<em>Chef Bishop changed the way we eat and how we cook<\/em>,\u201d says Les Dames d\u2019Escoffier BC Chapter President, Stephanie Jaeger. \u201c<em>His collaboration with the Kings and their farm started a culinary revolution.\u201d<\/em><\/strong><strong><em>\u00a0<\/em><\/strong><\/p>\n<p>Another legacy of John\u2019s is the people who have been trained and mentored by him, many who have gone on to shape BC\u2019s restaurant industry. <strong>Vikram Vij<\/strong>, <em>VIJ\u2019s,\u00a0Rangoli,\u00a0Vij\u2019s Railway Express, Shanik; My Shanti, Vij\u2019s at Home<\/em>; <strong>Andrey Durbach and Chris Stewart<\/strong>, <em>The Abbey; The Sardine Can, La Buca, Commissary, Pied-a-Terre; <\/em>\u00a0<strong>Dennis Green<\/strong> , <em>Avenue Grill, Barbara-Jo\u2019s, Green Chef<\/em>\u00a0 and pastry chef <strong>Dawn Gourley,\u00a0 <\/strong><em>Giovane\u00a0Cafe\u00a0&amp; Bakery, Bel Caf\u00e9, Lucky\u2019 s donuts,<\/em>\u00a0 are all alumni as are the fine chefs participating in the dinner.<\/p>\n<p><strong>More about John Bishop<\/strong><strong>\u00a0<\/strong><\/p>\n<p>John opened Bishop\u2019s just over 25 years ago in the Kitsilano area of Vancouver.
