The competition, which featured ocean-friendly seafood chowders served with local beer, was all in the name of sustainable seafood. The evening\u2019s victor was <strong>Ned Bell <\/strong>of Yew Restaurant, who was crowned by both an esteemed judging panel as the 2014 Vancouver Aquarium Ocean Wise Chowder Champion, and by event guests as winner of the People\u2019s Choice award.<\/p>\n<p>Chef Bell wowed both judging panel and guests with the recipe for his flavourful and super-local \u201cChowda,\u201d featuring Ocean Wise smoked black cod with Okanagan apples, Chilliwack corn and Fraser Valley honey. Past two-time chowder champion, Chris Whittaker of Forage, won the award for Best Beer Pairing by dishing up his Smoked Sablefish and Chanterelle Mushroom Chowder alongside ale from R&amp;B Brewing Company.<\/p>\n<p>\u201cThe Vancouver Aquarium\u2019s Ocean Wise Chowder Chowdown is not only a must-do on the city\u2019s fall event calendar, but it brings the community together to celebrate sustainable seafood and raise funds to support the Ocean Wise program,\u201d says Ann-Marie Copping, Vancouver Aquarium Ocean Wise manager. \u201cThe popularity of the Chowder Chowdown demonstrates how the sustainable seafood movement is strengthened by the chefs, suppliers, producers, and consumers who choose Ocean Wise. We couldn\u2019t do it without them.\u201d<\/p>\n<p>The seventh annual Ocean Wise Chowder Chowdown showcased 14 Ocean Wise chefs who joined the sustainable seafood movement by competitng head to head in a friendly competition with their original, ocean-friendly seafood chowders, served with local beers. The diverse ingredients of the chowders ran the spectrum, from Ocean Wise honey mussels to wild Pacific albacore tuna. A list of participating chefs and their bios can be found <a href=\"http:\/\/www.oceanwise.ca\/content\/vancouver-chowder-chowdown-2014\">here<\/a>.<\/p>\n<p><strong><em>Ned Bell, YEW Seafood &amp; Bar, Four Seasons Hotel Vancouver<\/em><\/strong><strong style=\"font-size: 15.5555562973022px; line-height: 1.5;\"><em>\u00a0<\/em><\/strong><\/p>\n<p>Oceanwise Smoked Black Cod \u00a0\u2018Chowda\u2019<br \/>\nOkanagan Apples, Chilliwack Corn, Fraser Valley Honey<\/p>\n<p>Recipe: 4-6 ppl<\/p>\n<p><strong>For the Chowder Base:<\/strong><\/p>\n<p>1 Liter Organic Avalon Dairy 35% Cream<br \/>\n2 tbsp butter<br \/>\n\u00bd cup Okanagan White Wine<br \/>\n\u00bd cup apple juice<br \/>\n1 onion, diced<br \/>\n1 Yukon Gold potato, steamed, peeled and diced<br \/>\n\u00bd cup celery, diced<br \/>\n\u00bd cup Chilliwack corn<br \/>\n1pc Okanagan apple<br \/>\n1 tbsp white peppercorns<br \/>\n3 tbsp sea salt<br \/>\n4tbsp Fraser Valley Honey<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>-saut\u00e9 the onions and celery in\u00a0the butter.<br \/>\n-add the salt and peppercorns.<br \/>\n-deglaze with the wine, and cook out for a few minutes<br \/>\n-add the cream and juice, simmer for 20 minutes.<br \/>\nPuree all the ingredients in a Vita Mix Blender and cool.<\/p>\n<p><strong>To Assemble the Chowder:<\/strong><\/p>\n<p>Warm the soup up with the smoked black cod, this will allow the cod to cook gently and add flavor. Add the fresh raw corn, the potato, and raw diced apple.
