Here\u2019s what&#8217;s new\u00a0with Stephen Drolet of <a href=\"http:\/\/camillescafe.com\/\" target=\"_blank\">Camille&#8217;s<\/a> in Victoria<\/p>\n<p><strong>Tell us a little bit about your restaurant and\/or style of cooking.\u00a0\u00a0<\/strong><\/p>\n<p>Our food is fresh &amp;\u00a0seasonal products, prepared with a nod to classic techniques and a bent for the modern. The Quebecois version of Shepherds Pie. Seared ground meat, mushrooms, onions, topped with creamed corn &amp; then mashed potatoes. Baked in the oven until a nice crisp topping develops.<\/p>\n<p><strong>With the holidays coming up, could you give us something easy to prepare that would\u00a0impress? Recipe please.<\/strong><\/p>\n<p>Cretons. Sweat a diced onion in a little grapeseed oild until translucent. Add ground pork &amp;\u00a0cover with chicken stock by about a half inch and simmer.\u00a0Add salt, pepper &amp;\u00a0mulling (or winter) type spices of your choice and stir. Allow to cook\u00a0until thickened and tip into\u00a0several non reactive dishes. Allow to cool and, when ready, spread on bread or toast with a mustard of your choice. Dan Barbers The Third Plate is an absolute fave!!<\/p>\n<p><strong>Any hints on what dish you will be preparing for Gold Medal Plate<\/strong>s?<\/p>\n<p>Smoked Scallops, Kiwi, Crab, Caviar.<\/p>\n<p><strong>What inspires you in your daily work?<\/strong><\/p>\n<p>The people\u00a0I get to spend my days with. The cooks, the\u00a0service staff, the guests. The farmers and suppliers. The writers and event\u00a0organizers I get to meet, as well as the media people I get to connect with.<\/p>\n<p><strong>If you could only have one small kitchen appliance what\u00a0would it b<\/strong>e?<\/p>\n<p>ummmmmm&#8230;.slapchop?<\/p>\n<p><strong>What is the one dish you never tire of making?<\/strong><\/p>\n<p>Wild Mushroom Pappardelle. A mix of wild mushrooms, house smoked pasta, creme fraiche, Oyster fritters, truffled aioli.
