While we have many talented chefs on the scene today,\u00a0not every chef can\u00a0mentor our future chefs, ensuring that talent is spread, futher developed and not lost. Over the years\u00a0Chef Jefferson Alvarez<\/a>, most recently cooking at Secret Location<\/a>, and now scouting for a location of his\u00a0own , has taken many eager\u00a0chefs under his wing and sent them on to further their culinary education overseas.<\/p>\n

This Friday Chef Alvarez is collaborating with one of his past students, Chef Chanthay Yen, on what is sure to be a most unique and delicious dining experienc at The Aviary in East Van<\/a>\u00a0. Chanthay, under Alvarez’s guidance, recently ventured out to Mugaritz in Spain, one of the world’s 50 Best Restaurants<\/a>.\u00a0This was the second of Alvarez’s proteges to stage at Mugaritz and\u00a0the sixth chef that he\u00a0has sent to a world’s 50 best restaurant.\u00a0Alvarez’s states his goal as\u00a0a chef is “To act like a father to my cooks and make sure they become better that what I was”. He is providing young chefs with the tools and guidance to secure a good future in this tough industry.<\/p>\n

Chef Yen has now been accepted into\u00a0Ferran Adrian\u2019s el Bulli Foundation at BulliPedia Lab<\/a> in Barcelona, Spain, where he will conduct research on food while working with professors, scientists, and other professionals. This dinner, and the gofundme campaign<\/a>, will help \u00a0provide Yen\u00a0with the proper tools to learn a new language and make it to Barcelona safely.<\/p>\n
