Chefs from across Canada\u00a0will meet in Kelowna\u00a0on February 5 and 6\u00a0to\u00a0compete in the\u00a0Gold\u00a0Medal Plates<\/a> in the Canadian Culinary Championships. \u00a0We\u2019re heading over to check out the event and as a prequil have interviewed the chefs. Here\u2019s our answers from Chef Roger Andrews\u00a0from Relish Gourmet Burgers.<\/a><\/p>\n

Tell us a little bit about your restaurant and\/or style of cooking. \u00a0<\/strong><\/p>\n

The Restaurant I own is relish Gourmet Burgers. \u00a0It\u2019s a small franchise that started in Fredericton and is grown across the country with stores from St John\u2019s to Vancouver.<\/p>\n

My cooking style is a little different then restaurant style as I like elegant plating with flavor compatibility. \u00a0Everything on plate must tie together the highlight or focus ingredient. \u00a0I try to implement as many tastes, colors and textures to achieve this.<\/p>\n

Where do you eat in your city?<\/strong><\/p>\n

When I go out it\u2019s usually for something I am not fond of making myself like sushi. \u00a0Sun Sushi is my favorite in St John\u2019s. \u00a0I don\u2019t have a deep fryer at my home so Fish and chips is another favorite.<\/p>\n

What would be your ideal food day?\u00a0<\/strong><\/p>\n

Smoked salmon Benedict for breakfast with coffee and fresh OJ<\/p>\n

Fish and Chips for Lunch<\/p>\n

Roast turkey Dinner ( Newfoundland style Jiggs dinner) \u00a0for dinner<\/p>\n

What trend do you wish would die?<\/strong><\/p>\n

The trend of restaurant haters blasting places on social media. \u00a0Everyone is a critic now days and they don\u2019t realize the damage they can do to peoples livelihoods<\/p>\n

What trend\/s do you wish would be next?<\/strong><\/p>\n

Bring back the Gourmet Burger craze<\/p>\n

What ingredient do you always have on hand?<\/strong><\/p>\n

Home- Sesame Oil<\/p>\n

Restaurant -Ground beef<\/p>\n

What\u2019s your go-to recipe when you\u2019re eating at home?\u00a0<\/strong><\/p>\n

There \u00a0is a recipe I use a lot and family loves it. \u00a0The mother of a childhood friend introduced me to a soft shell taco recipe made with cornmeal that is great. \u00a0Thanks Mrs. Howell!!!!<\/p>\n

What equipment do you wish you had in your kitchen?<\/strong><\/p>\n

At home I need to get a vitamix<\/p>\n

What cookbook would you suggest for a gift for your foodie friends this year?<\/strong><\/p>\n

Momofuku by David Chang really gives an idea of flavor combinations and simple ideas that work well<\/p>\n

Any hints on what dish you will be preparing for Gold Medal Plates? <\/strong><\/p>\n

Dish at Gala will feature Same ingredients as the local one. \u00a0The name was \u201cEggs and toast\u201d<\/p>\n

What wine\/beer\/libation are you pairing with this year?<\/strong><\/p>\n

What country\/city would you travel to just for the purpose of eating?<\/strong><\/p>\n

What do you think of yelp?<\/strong><\/p>\n

Hate it. \u00a0Demoralizing for owners and chefs to be reading people constantly bashing and commenting on things. \u00a0It\u2019s a never ending critic. \u00a0I stopped looking cause it was driving me nuts. \u00a0On another side if every review is awesome that is not good either as no place is perfect and people always have flaws.<\/p>\n

What would be in your documentary about Canadian Chefs? Title? <\/strong><\/p>\n

Coast to Coast to Coast\u00a0 would be the title. and by that\u00a0 I don\u2019t mean Halifax to Vancouver. \u00a0I\u2019m talking St John\u2019s to Victoria and right to the top in Alert, Nunavut . \u00a0Highlighting interesting food people and ingredients all over this country.<\/p>\n","protected":false},"excerpt":{"rendered":"
