Tell us a little bit about your restaurant and\/or style of cooking.<\/strong><\/p>\n We are a casual dining spot in the vibrant neighborhood, Osborne Village, focusing on International flavors hoping to represent the multicultural heritage of Winnipeg.<\/p>\n Where do you eat in your city?<\/strong><\/p>\n Kum Koon Garden on my day off for dim sum, and Deer\u00a0+ Almond when I feel I deserve something extra special<\/p>\n What would be your ideal food day?\u00a0<\/strong><\/p>\n A pot luck Filipino fiesta eating and drinking with reckless abandon<\/p>\n What trend do you wish would die?<\/strong><\/p>\n If a restaurant is operating on a current trend and its working for them and providing pleasure to their guests, all the best to them. Sometimes I will come across a trend that might suit our establishment, excite my colleagues, or if it\u2019s something new for me to try, I\u2019ll give it a shot.<\/p>\n What ingredient do you always have on hand?<\/strong><\/p>\n Salt. Kosher salt, Maldon salt, Hawaiian salt, etc. I\u2019m not alone on this one. What\u2019s your go-to recipe when you\u2019re eating at home?\u00a0<\/strong><\/p>\n Spaghetti Bolognese<\/p>\n What equipment do you wish you had in your kitchen?<\/strong><\/p>\n A rational oven would be cool, but I\u2019m good with the basic essentials.<\/p>\n What cookbook would you suggest for a gift for your foodie friends this year?<\/strong><\/p>\n Winnipeg Cooks. It\u2019s local and that\u2019s a trend everybody can get behind.<\/p>\n Any hints on what dish you will be preparing for Gold Medal Plates? <\/strong><\/p>\n I\u2019ll just say this prairie boy is using some west coast products with local products from Winnipeg.<\/p>\n What wine\/beer\/libation are you pairing with this year?<\/strong><\/p>\n Burrowing Owl Chardonnay. Its delicious.<\/p>\n Who is coming with you?<\/strong><\/p>\n My wife, Kristel Pastorin, who is the executive chef of our sister restaurant, The Grove.\u00a0 Scott Ball, who was very instrumental in opening The Cornerstone.<\/p>\n What inspires you in your daily work? <\/strong><\/p>\n The thought of making someone happy whether it\u2019s a guest or any of my colleagues;\u00a0 having the same enthusiasm as my kids of learning something new; and being a mentor to any of the young people working at our restaurant no matter what career or profession they choose to pursue.<\/p>\n If you could only have one small kitchen appliance what would it be<\/strong>?<\/p>\n Blendtec Blender<\/p>\n Why do you cook? Fame? Love? Pleasure? <\/strong><\/p>\n I cook for\/with\/out of love.
