Chef Scott Korzack Bacaro<\/h2>\n

Canada\u2019s\u00a0Great Kitchen Party<\/a> is the lead-up to the Canadian Culinary Championship and is underway in cities across Canada. Vancouver\u2019s competition takes place on November 24, 2022, at the Westin. We\u2019ve asked the chefs a few questions to get to know them a bit better and here are the results from Chef Scott Korzack from Bacaro<\/a>\u00a0Vancouver.<\/p>\n

Tell us a little bit about your style of cooking.<\/strong><\/p>\n

I enjoy letting great ingredients shine.\u00a0 I enjoy food to look simple, yet there is a lot of work and craft behind it.<\/p>\n

\u00a0Where do you eat in Vancouver when you have a day off? Top three spots perhaps?<\/strong><\/p>\n

Marutama, Elisa, Fanny Bay.<\/p>\n

What would be your ideal food day?\u00a0<\/strong><\/p>\n

I loved my days in Venice a few weeks ago.\u00a0 Walking 25km\/day, eating and drinking whatever piqued\u00a0my interest and taking in the sights and sounds and back alleys of the city.<\/p>\n

What trend do you wish would die?<\/strong><\/p>\n

\u00a0Over industrialized, low-quality food.<\/strong><\/p>\n

What trend\/s do you wish would be next?<\/strong><\/p>\n

Supporting craftsmanship.\u00a0 Whether that is farmers, butchers, or small restaurants.<\/p>\n

Do you have a favourite food and beverage pairing?<\/strong><\/p>\n

Nachos and lager.<\/p>\n

What ingredients do you always have on hand?<\/strong><\/p>\n

Anchovies and olive oil.\u00a0 I rarely cook at home, so things won’t go bad.<\/p>\n

What\u2019s your go-to recipe when you\u2019re eating at home?\u00a0<\/strong><\/p>\n

Walking to a restaurant to dine in or take out.<\/p>\n
