The lobby of the Hyatt Regency Vancouver is home to the annual gingerbread contest (exhibit runs until December 26), an event where culinary schools, high schools and corporations compete to craft the best gingerbread house. Points are given for originality, level of difficulty, overall appearance, and attention to detail. I have judged for the past two years and it’s an absolute delight to see how much effort everyone is willing to put in. This is a great recipe for an amazing ham. Thank god there’s no pineapple! 1 (10 lb) ham 2 teaspoon cloves 1/2 cup brown sugar 1 cup honey 3 tablespoons grainy dijon mustard 4 tablespoons orange juice Place ham, skin side up, in a roasting pan and bake covered in foil at 325 degrees for 20 minutes per pound. For 10 lbs you’ll need 3 1/2 hours. Remove ham from the oven. Score fat in diamond shapes. Stick cloves on the ham. Combine honey, mustard, sugar and orange juice and spread over the ham.
