Braised Chicken and Portabello Mushroom

4 free run chicken breast, skin on
8 slices of thinly cut pancetta
2 small shallots diced
2 portabello mushroom sliced lengthwise
4 cloves garlic crushed
4 sprigs fresh oregano
6 sprigs fresh thyme
2 cups whipping cream
1 cup veal stock
1 cup white wine
½ cup grated grana padano parmesan
vegetable oil 4 tablespoons
salt and pepper

In a heavy bottomed skillet or pot heat vegetable oil and place chicken skin side down and place pancetta in open areas in pot with the chicken. Cook until skin has crisped and pancetta is almost cooked through. Add shallots, portabello mushrooms and fresh herbs and then turn the chicken over and cook for another 2 minutes or until mushrooms are partly cooked. Add all remaining items and cook for 20 minutes at medium low heat or until chicken is cooked through.
Remove chicken and serve with sauce over top and enjoy.
