Catch the April Seafood Promotion at Herons Restaurant

For the entire month of April, diners to Fairmont Hotels & Resorts can dive into a green cuisine menu and make a difference on behalf of the National Geographic Society (NGS). As a longtime and committed advocate of ocean sustainability, Herons Restaurant at The Fairmont Waterfront, will feature a wide variety of fish and seafood from local waters to protect endangered species and give diners alternative choices. Diners will be invited to donate $1 to the National Geographic Society in support of ocean conservation and the restoration of living marine resources.

Savour Chef Dore’s first courses such as Salt Spring Island Honey Mussels with Chardonnay, Tomato, Shallots and Fresh Herbs or his Corn Tempura Dungeness Crab Fry Leg. Mains feature dishes like BC Salmon with Bacon Truffle Vinaigrette and Dandelion Greens or Seared BC Halibut with English Pea and Housemade Ricotta Ravioli with Tomato Jam.
