There’s a new trend in Vancouver’s dining scene – ‘nose to tail’ dining. However, ‘nose to tail’ is a way of life in France. Every part of the animal is used – especially at the harvest time of year. Owner John Blakeley and Executive Chef Tobias Grignon have developed a series of Offal Bits specials for the month of November – flavourful dishes like Beef Tongue Pastrami, Braised Pig’s Trotter and house-made Andouillette Sausage. Specials will be offered as Petits Plats, Starters and Mains. Give them a try – you’ll be ‘offally glad’ you did.
