Denis Cotter is the creator of an original and unique style of meat-free cuisine, showcased in his restaurant, Cafe Paradiso, in Cork, Ireland, and in his four acclaimed cookbooks, including ‘Paradiso Seasons’, awarded best vegetarian cookbook in the world in 2004, and his latest ‘for the love of food’, published by Harper Collins in Canada in 2011. He is also an experienced cookery teacher and consultant, having taught at many leading cookery schools in Ireland and the UK, as well as some appearances in Canada, including the Stratford Chefs School.
