Tableau Bar Bistro, a new neighbourhood eatery, will be hitting Vancouver’s distinguished Coal Harbour neighbourhood this spring. Led by executive Chef Marc-André Choquette, the new restaurant will cater to the downtown waterfront neighbourhood by offering fresh and affordable bistro fare in a comfortable yet dynamic environment. Tableau Bar Bistro’s menu will blend classic culinary flavours of Paris with the use of fresh west coast ingredients.
The French-inspired menu prepared by Executive Chef Marc-André Choquette and Executive Sous Chef Tret Jordan will source many products from local and organic farmers and purveyors. The restaurant bar will serve seasonal in-house and classic cocktails as well as an evolving cocktail feature. Tableau will also feature local and draft beers on tap as well as an eclectic mix of approachable and affordable quality wines built from the regions of France.
“I’m incredibly excited about the opportunity to share my culinary creations with the Coal Harbour neighbourhood,” says Choquette. “Our traditional French-inspired menu will offer an updated twist on the classics. I have no doubt that the quality and flavour of Tableau’s fare will fit perfectly with this neighbourhood.”
Choquette brings a formidable resume with him to Tableau. Born in Montreal, QC, he studied at the Institut de tourisme et d’hôtellerie du Québec and apprenticed at Richard Bastien’s renowned Le Mitoyen restaurant. He honed his training in classical French cuisine at the Michelin-starred Restaurant Gill in Normandy, France. In 1998 Choquette moved to Vancouver where he worked as Executive Chef for eight years at Lumiere Restaurant and was an integral part of Rob Feenie’s winning “Iron Chef America” culinary team.
“We’re thrilled to have Chef Marc-André Choquette involved in the creation of Tableau,” says Tableau Bar Bistro and Loden Hotel general manager Michael Love. “Choquette has served as the executive chef to the Loden since we launched in 2007 and his loyal following is undeniable. With 17 years of culinary expertise under his belt, we know his seasonal menu will satisfy any palette.”
Local interior designer Franco Avignoni has taken on the task of creating Vancouver’s newest establishment. Blending old world classic bistro elements such as custom brasses, solid wood panelling, marble and leather banquettes with original “pop art” elements, he has created a truly modern, dynamic environment.
“Our vision for Tableau is more than just a French-inspired restaurant – it is a place to visit relax or enjoy the company of friends,” says Choquette. Whether for brunch, lunch, dinner or drinks Tableau is Coal Harbour’s neighbourhood bar bistro.
