We at Provence Marinaside are giddy with summer frivolity! Now that school is out and summer is in full swing it is really time to relax! Join us on our sun soaked seaside patio for our new July Chef’s menu. It is our true love of the West Coast that inspired these creations. This month we are paying homage to the almighty salmon with our traditional French twist! Family members, remember that when you order the Chef’s menu and tell your server this month’s code word (Saumon) or print the certificate, you get your very special family price!

Every time you order the Chef’s menu you can enter to win our July contest! This month we are giving away an English Bay picnic for two to be enjoyed at your leisure. We also want to congratulate Marshall who received 10lbs of Spot Prawns from Provence Marinaside and Jonathan who received 10lbs of spot prawns from Provence Mediterranean Grill in May’s contest!

Chef Jean-Francis and Sommelier Rachelle have some more awesome tips for your summer barbequing.
Salmon: Mix 1 cup of white sugar and 1 cup of sea salt with a tablespoon of fennel seed. Use the sugar / salt mixture to thoroughly coat your salmon. Allow to marinate for 1/2 to 1 hour then rinse the salmon and grill as normal.
Wine pairing: A well oaked California Chardonnay should compliment this dish nicely. Try the Russian River Chardonnay by Sonoma Cutrer, available at your local BC Liquor Store. Or for those who prefer a red you could try the Morgon from Dominique Piron, also available at BC Liquor Stores.
