If you are a chicken wing lover I am sure you’ll have some of your own favourites. Vancouver Foodster is running a challenge right now though, so it might just be the time to try some new flavours.
We sampled a few with some mixed results. Number one? Read on.
As part of an exceptionally tasty dinner last night we tried Chef Jimmy Stewart’s CONFIT CHICKEN WINGS. These gorgeous numbers are brined, smoked, confit and served with pine salt and mayo. Crisp, flavourful and right on the mark.
Over on the east side of town the Caribbean flavours are represented by Chef Cullin David and his free-range chicken wings marinated in house made jerk and tossed with flour and secret spices, deep fried and served with a spicy tropical glaze. These wings are beyond delicious. So addictive, crisp, and despite deep-frying not in the least oily. Addictive plus! Dark and Stormy cocktail the ideal pairing.
At Rogue Wet Bar Chef Cory Chapman served up Kimchi Chicken Wings with some R and B Sun God ale.
Rather good wings but would have been so much better with a bit more spice and the larger pieces with mostly white meat where a tad dry.
The creation that seemed completely wacked was the Salted Caramel Waffle Wings. These were crunchy and moist, and had some fun sweet flavours and texture, but a bit cold unfortunately.
Chef Rennie Chotalal gained some fame from his creation and appeared on Global TV and CTV of late.

Everyone loves Chicken Wings and they are a popular dish at local eateries and beyond. I chose Chicken Wings for my next challenge said Richard Wolak, this challenge features 13 participating restaurants and pubs in Vancouver, Coquitlam, and Richmond that runs from May 14 – June 9, 2013.
Participating restaurants are either showcasing Chicken Wings Creations that were specially created just for this challenge or already on their menu and all will be offered in all of these restaurants from May 14- June 9, 2013. The public is invited to visit any of the participating establishments and order the Chicken Wings creations and then decide on which ones they think are worthy of winning the challenge.

Rogue Kitchen & Wet Bar has created Kimchi Chicken Wings
