Tiki-themed and Classic Cocktails at The Westin Bayshore’s H2
For the latest Crafted Spirits Show on TSN1410 I interview Dylan Williams over some well-designed cocktails and happy hour eats at the newly opened H2 Rotisserie & Bar in the Westin Bayshore Hotel. Trader Vic’s was one of my favourite stops in the city back in the day, so it’s great to see a cocktail menu paying homage to the tiki bar that was once the “it” place in Vancouver. Williams also knows his classics and the menu salutes a lot of our local spirits and ingredients.
Head down to the patio before the summer ends and sip on a cocktail-filled pineapple poolside, or stay cool indoors and try the Dr. Sun Yet Sun Remedy, with Sheringham seaside gin from Vancouver Island, mandarin yuzu orgeat, lemon juice, ms better miraculous foamer & mt. fuji bitters black moon smoked rosemary gin, white tea syrup, lemon juice, and teapot bitters. There’s much reason to keep drinking here, from the cocktail list to the people watching.

“Botanical-driven” bartender Dylan Williams has crafted H2’s completely local cocktail list and forages for signature garnish ingredients, such as spruce tips, that reflect Vancouver. A participant in many local cocktail events, including Science World’s Science of the Cocktail (2016 and 2017) and Tales of the Cocktail (2011 and 2012), Williams has been a bartender at Bambudda and The Shameful Tiki Room, and bar manager at The Acorn. He’s also worked in Sales & Development for Vancouver’s Ms. Better’s Bitters since 2015.
