After working his way through some of the finest kitchens in Canada, Tim Cuff has made the move to Whistler as Executive Chef of the Nita Lake Lodge.
A native of Saskatoon, Saskatchewan, Cuff’s career choice was a product of his environment. Growing up in a small farm town, the Cuff family sourced much of their food directly from the nearby farmers. Be it milk and cheese from the local dairy or meat from the neighbouring butcher, Cuff grew a natural passion for food and a fine appreciation for the hard work and dedication of small-scale farmers and producers.
After studying culinary arts at the Southern Alberta Institute of Technology, Cuff has had the opportunity to work in some of Canada’s most reputable restaurants including Teatro Restaurant in Calgary, Mission Hill Family Estate Winery, and the Wickaninnish Inn. Most recently, for the past two years, Cuff was the Sous Chef at West Restaurant and Bar in Vancouver.
As testament to Cuff’s dedication to the culinary profession, in 2006 Cuff received the prestigious Chef de Cuisine certification by the Canadian Culinary Federation. The designation is the highest professional culinary recognition and accreditation in Canada representing the culmination of the highest standards of managerial and administrative responsibilities, culinary skills and dedication to the cooking profession.
By working with influential leaders of the Canadian culinary profession who have helped shape his style and depth of knowledge, Cuff has developed his own distinctive style and culinary philosophy. For Cuff, it’s about respect. Respect for classic cooking techniques, for food, and for the myriad of local supplies that he works so closely with. He insists that there is a difference, a richness and depth of flavour and freshness that comes from their passion and attention to detail.
As his first order of business at the newly managed Nita Lake Lodge, Cuff has been tasked with re-launching the hotel’s entire food and beverage outlets. At the new Aura guests can expect to find a place where incorporating the finest and freshest ingredients from the area and their gardens are treated with respect and a clean hand. What is old is new again. With a menu inspired by seasonal vegetables, Aura cooks with European nouveau flair rooted in classical culinary craft. Set lakeside, Aura features a private dining room and an expansive outdoor patio where diners can enjoy while soaking in the breathtaking views of the water and surrounding mountains. Cure lounge is the perfect place to kick back and enjoy an apres ski drink or savour a favourite novel. Fix features wholesome, healthy treats with a mouthwatering array of take-home meals and a menu that will always include vegan and vegetarian options.
“We are thrilled that Executive Chef Tim Cuff has chosen to join our team,” says Ram Tumuluri, Managing Director for the Nita Lake Lodge. “Tim will be an integral part of the revitalization and relaunch of the hotel. His immense talent and experience will help propel the hotel’s reputation for excellence as we move forward into the future.”
