The St. Regis Hotel is proud to announce new leadership and a completely revamped menu at the St. Regis Bar and Grill. Combining a warm, inviting room with a menu that has been painstakingly developed and tested over the last three months, the new St. Regis Bar & Grill will offer thoughtfully executed classics in just the most perfect location for lunch, after work unwind time or pre game and concert dinner.
Under the direction of St. Regis Hotel general manager Jeremy Roncoroni, a search was undertaken to hire a new Bar & Grill general manager. The search was a short one: “I had a candidate in mind from my time at the Metropolitan Hotel,” said Jeremy Roncoroni. “I worked with Matt Brear more than once and kept in touch with him over the last few years as he took on the new challenge of opening and running a high-end pub. He was my first choice to take on this task and we couldn’t be more pleased that he has joined us.”
Since joining the St. Regis team, Matt has worked hard with former Canada’s Next Great Chef winner Laura Sharpe and St. Regis Bar and Grill chef Gerry Kleinhout to completely rebuild the menu. “We’ve taken from May until now to work through a brand new menu. It’s been completely reimagined with an emphasis on freshness, taste, value and consistent delivery.”
Some of the feature items on the new menu include a delicious “Falafel Burger” offering the Lebanese Classic on a rustic roll instead of a pita; a Yorkshire Pudding appetizer which stuffs Mini Yorkshire Puddings with roast beef and serves them with horseradish and jus; and a traditional hearty Irish Stew.
“The challenge for the entire team was to take the best things about the Bar & Grill — the warm, wood-lined heritage room, the great front of house staff, the unbeatable downtown location — and revamp the menu to surprise and please the demanding tastes of Vancouver diners,” said Brear. “The St. Regis Bar and Grill has always been a pub and we serve pub food. With this new menu, we’ve made sure that we deliver classic pub food executed to the highest level of freshness, taste and value.”
In keeping with the award-winning formula of the Hotel, the Bar & Grill offers great value and minimal upcharges on the menu. Want a garden salad with your sandwich instead of fries? That’s no charge. Want blue cheese and dip with your chicken wings? It’s already included.
With the change in management structure of the Bar and Grill and St. Regis Fine Wine and Spirits, the entire St. Regis Vancouver operation is now under the meticulous, expert leadership of Jeremy Roncoroni of Roncoroni Hospitality Consulting.
“We’re certainly not here to compete with our neighbours and partners at the Shore Club or Gotham,” said Brear. “At heart, we’re a neighbourhood pub and we’re going to try and be the best one around by offering great classic food, a warm, fun room and the best place to watch the game or stop in after work or before a concert.”
The St. Regis Bar & Grill is open Monday to Saturday and is located at 608 Dunsmuir Street. For more information on the St. Regis Hotel, Bar & Grill and Wine & Spirits, please visit stregishotel.com.
