You might hear a bit more about bourbon this year as we’re heading to Louisville in October for the Les Dames d’Escoffier International conference and there’s research to do ahead of time. In preparation, we’ve been sampling the Louisville-based Angel’s Envy Port Finished Bourbon this month. Angel’s Envy is among the first American whiskey producers to employ a secondary finishing process, in this case, Port barrels, across its portfolio, and we are digging the smoothness of what can be a little bit of a wilder spirit. Angel’s Envy produces finished whiskeys typically aged four to six years in new, charred white oak barrels then blended to meet their ideal flavour profile. In the final stages of production, Angel’s Envy bourbon is finished for up to six additional months in port barrels from Portugal and then blended again once the taste is perfected.

This Kentucky Straight Bourbon Whiskey is finished in Port Wine Barrels and is 86.6 proof (43.3% ABV). On the nose, it offers notes of subtle vanilla, raisins, maple syrup and toasted nuts. On the palate, notes of vanilla, ripe fruit, maple syrup, toast and bitter chocolate are present before it finishes with a clean and lingering sweetness and a hint of Madeira that slowly fades.

Ingredients

  • 2 oz Bourbon Finished in Port Wine Barrels
  • 1 oz Noilly Prat® Sweet Vermouth
  • 2-3 dashes Angostura® bitters to taste
Directions

  1. Add all ingredients into a mixing glass and fill with ice.
  2. Stir for 20-25 seconds to dilute.
  3. Strain into a chilled cocktail glass.
  4. Garnish with a cherry.
  5. Try an orange or lemon peel to garnish instead of a cherry.
