While we have many talented chefs on the scene today, not every chef can mentor our future chefs, ensuring that talent is spread, futher developed and not lost. Over the years Chef Jefferson Alvarez, most recently cooking at Secret Location, and now scouting for a location of his own , has taken many eager chefs under his wing and sent them on to further their culinary education overseas.
This Friday Chef Alvarez is collaborating with one of his past students, Chef Chanthay Yen, on what is sure to be a most unique and delicious dining experienc at The Aviary in East Van . Chanthay, under Alvarez’s guidance, recently ventured out to Mugaritz in Spain, one of the world’s 50 Best Restaurants. This was the second of Alvarez’s proteges to stage at Mugaritz and the sixth chef that he has sent to a world’s 50 best restaurant. Alvarez’s states his goal as a chef is “To act like a father to my cooks and make sure they become better that what I was”. He is providing young chefs with the tools and guidance to secure a good future in this tough industry.
Chef Yen has now been accepted into Ferran Adrian’s el Bulli Foundation at BulliPedia Lab in Barcelona, Spain, where he will conduct research on food while working with professors, scientists, and other professionals. This dinner, and the gofundme campaign, will help provide Yen with the proper tools to learn a new language and make it to Barcelona safely.
Chef Alvarez has leaked a small portion of the menu, which is, of course, impressive. We can’t wait for the unveiling of the remainder and wouldn’t miss this one. Hope to see you there. TICKETS.
