The staff at ROMA are hosting their third Quinto Quarto dinner on Wednesday, September 26 with two seatings available at 6pm and 8:30pm. Dinner is served “alla famiglia,” showcasing offal served at communal tables. Quinto Quarto refers to the “fifth quarter” of the animal (the offal) that Roman butchers often kept for themselves, as it was all the poor or people of lower classes could afford. Offal, in Roman cooking, is as important as any of the outer quarters, fore and hind. Chefs Ted Anderson and Nathan Lowey are dedicated to keeping this important Roman tradition alive!
