Chef Connie DeSousa and her mentorship of Chef Rafael Covarrubias
We’ve got something new in the works, a monthly podcast. We’ve called it Clutch-Her. Cultch means a mass of stones, broken shells, and grit of which an oyster bed is formed, and at this time in hospitality, we think this is just the word we need to describe the current state of affairs.
In this episode we’re speaking with Chef Connie DeSousa, Catch her on Instagram one of Calgary’s best-known chefs. DeSousa is co-owner of CHARCUT ROAST HOUSE, CHARBAR, ALLEY BURGER, ROOFTOP BAR @SIMMONS, Connie and John’s Pizza with a new spot that just opened at Blush Lane at Marda Loop
DeSousa’s competed in the World Culinary Olympics in Germany and the Chaîne De Rotîsseurs in South Africa.
Chef DeSousa Connie is the mentor to Chef Rafael Covarrubias who is competing in the S. Pellegrino Young Chef Grand Finale in Milan Italy on October 28 and October 30. Chef Rafael Covarrubias is from Hexagon Restaurant in Oakville, Ontario and he represents North America at the Grand Finale!
We catch up with Connie and learn a bit about what’s going on in her world in Calgary and discuss the S. Pellegrino Young Chef Academy and how she’s involved, and we learn more about the dish Covarrubias is preparing. Chef DeSousa also has a great agenda for a food lovers day in Calgary, making us wish we were heading there soon!
