Chef Dez Lo Brings Good Jook Congee Bar to North Vancouver

Chef Dez Lo, Top Chef Canada Season 10 runner-up, is bringing a one-day jook (congee) pop-up to North Vancouver on Sunday, May 3, and this one feels like more than a casual lunch stop.  Chef Dez Lo Good Jook Congee Bar, is a collaboration between Chef Dez Lo, eatfish.ca, and Holy Duck Chili Oil.

Good Jook Congee Bar Comes to the Shipyards

Set at Shipbuilders’ Square in North Vancouver as part of the Vancouver Hong Kong Fair, the Good Jook Congee Bar will serve two crafted bowls for $10 each, available from 11 am to 7 pm, or until sold out.

This is not the bland, background congee some people think they know. This is jook with memory, texture, comfort, and a proper hit of heat.

What’s on the Menu

OG Seafood Jook
A fish congee built on BC halibut stock, topped with fresh West Coast seafood. This bowl is pescatarian and leans into coastal ingredients with traditional Hong Kong comfort.

Shroom Jook
A deep, savoury mushroom congee with XO-style mushroom sauce and pickled hon shimeji. This bowl is vegan, but definitely not an afterthought.

Come Eat Jook. Come Add Oil.

To finish the bowls, guests can help themselves to a free-flow selection of Holy Duck Chili Oil. In other words, yes, there will be plenty available.

“Add oil,” a Cantonese phrase of encouragement, is both a cultural nod and a literal finishing touch here.

Why This Pop-Up Matters

Pop-ups happen every weekend around Vancouver, but this one stands out.

Chef Dez Lo is taking something deeply familiar to many families and serving it in a way that is affordable, accessible, and rooted in community. Pair that with BC seafood, a strong local food collaboration, and the energy of the Shipyards, and this has all the makings of a lineup-worthy Sunday.

There will also be frozen seafood congee available for sale from eatfish.ca, so you may be able to take a little of the comfort home.
