Chef David Hawksworth and his team visited New York last week to cook at James Beard House, home of the non-profit foundation named after the iconic cookbook author and teacher James Beard.

Inspired by this event, the Hawksworth team is bringing a taste of New York to Vancouver for the next two weeks with a special James Beard House tasting menu that showcases highlights from the fundraising dinner.

The five-course tasting menu features the best of contemporary Canadian cuisine and begins with an appetizer of Dungeness crab, Brooke trout roe, green apple, horseradish and brioche. A fish course of Pacific sablefish, chanterelles, corn, scallions, bacon dashi precedes a meat dish of roasted Pekin duck breast with chestnut, squash, prosciutto and fig. The taste of fall continues with Chef Hawksworth’s slow cooked beef shortrib, endive, celeriac and black pepper. Finish off with a final course of vanilla, apple and hazelnut.
