Two talented professionals enhance guest experience at Uva Wine Bar and Cibo Trattoria
Uva Wine Bar and Cibo Trattoria, located in Vancouver’s chic Moda Hotel, are delighted to announce the addition of two talented professionals to their award-winning team. David Fert is the General Manager of Cibo Trattoria and UVA Wine Bar, and David Bain is the Bar Manager at UVA Wine Bar.
Vienna, Austria native David Fert brings a rich background in restaurant management and wine direction to his general manager post at UVA Wine Bar and Cibo Trattoria. But more importantly, he brings a warm smile, and charismatic personality that delighted many a patron during his recent tenure at popular Divino Wine Bar. Prior to his arrival in Vancouver, David presided as Wine Director over Europe’s largest magnum bottle cellar at famed Hospiz Alm resort, an award-winning five star hotel and restaurant in Austria with one of the most sought-after wine collections in Europe. David’s love and enthusiasm for wine and food developed early on in life, and grew exponentially through his years of study in restaurant management – cumulating with the attainment of his Diploma Sommelier. Through hard work and a passion for excellence, David has had the opportunity to work at some of the finest restaurants in Europe such as Guarda Val, Du Théâtre les Vins and Concerto prior to his prestigious appointment at Hospiz Alm. Focused on providing exceptional service and memorable experiences for his guests, David’s aim is to make Cibo and Uva the “go to” place in downtown Vancouver for exceptional food and wine– whatever the occasion.
Another bright star recently added to the award-winning UVA team is well-respected and local Vancouverite David Bain – formerly from acclaimed West Restaurant in Vancouver. David Bain brings energetic passion and exquisite skill behind the bar, resulting in a varied collection of wonderfully concocted ‘craft’ cocktails for UVA patrons to enjoy. His love for the industry was ignited as a teenager, and further developed through years of hard work at many of Vancouver’s top restaurants like Blue Water Café + Raw Bar, Brix, Chow, West and Fiction. David – being an adventurous spirit – seized the opportunity to travel to Australia where he worked at Harvest in Perth and Taxi Dining Room in Melbourne before returning to Vancouver. David, an industry favorite, thrives on drawing on the expertise of his colleagues and, above-all, is dedicated to sharing his positive energy, product knowledge and cutting-edge technique with his guests.
BC’s bounty shines this spring at Cibo Trattoria, with a special spring lamb dinner taking place on April 22nd and 23rd. For $48 per person (add $36 for wine pairings), guests will enjoy a rustic five-course menu crafted by Cibo’s talented Executive Chef Neil Taylor. Dishes include bruschetta of buffalo mozzarella, smashed fresh chickpeas, pecorino and mint; “asparagus milanese” with fried duck egg, chili, parmesan and e.v.o. oil; risotto of stinging nettles with gorgonzola, marjoram, butter and parmesan; spring lamb with vignole of peas, artichokes, prosciutto and mint; and “zuppa inglese”-trifle of rhubarb, vanilla, sponge cake and mascarpone.
