Chef Connie DeSousa, affectionately known as the “primal ballerina” because of her years of formal dance training combined with her meat-centric culinary cuisine, is the co-owner of Calgary’s well-known and critically acclaimed Charcut Roast House. DeSousa and her partner John Jackson are opening their new venture, Charbar, this spring and have appointed rising culinary star Jessica Pelland as the new executive chef. Both join Andrea Carlson at her restaurant, Burdock and Co., which opened in 2012 on Vancouver’s hip Main Street. Carlson earned her knives in the kitchens of well-known BC restaurants, including C Restaurant, Sooke Harbour House, and Raincity Grill, and she spent six years as the executive chef at Vancouver’s legendary Bishop’s Restaurant. Carlson’s menu is hyper-local and organic, showcasing the best of BC.  This dinner with DeSousa, Pelland and Carlson celebrates Canada’s female chef powerhouses.
