For dessert he’ll prepare an incredible brandy soaked Greek Halvah cake make with semolina flour, almonds and cinnamon.

Tonight Chef Anthony will create Italian style dishes that are sure to become classics in your home and a regular addition to your culinary repertoire. On the menu tonight is a delicious Peasant Style Tomato Soup followed by a Sicilian Style Pork Loin Roast Stuffed with Currants, Pine Nuts, Lemon & Fresh Parsley. The pasta course is Conghiglie Pasta (large shells) Stuffed with Smoked Bacon and Creamed Spinach. One word – delicious !

Grape and Goat Cheese Truffles with Pistachio Dust
This is a super simple recipe that takes minutes to make but tastes completely decadent! Enjoy as an appetizer with a bottle of your favourite wine.
Ingredients:
Seedless Red Grapes
Soft Goat Cheese (room temperature)
1 cup pistachios, crushed to a fine powder in a spice or coffee bean grinder
Method:
Pinch off a small amount of goat cheese and form a small indentation with your thumb. Place the grape inside and cover with goat cheese, rolling it in your hand until you have a smooth ball.
Roll truffles in pistachio dust until completely covered. Refrigerate until ready to serve.
