Van Doren Chan is the founder of C’est la V., a wine and culinary consultancy that emphasizes the importance of sustainable practices and promotes as possible a “farm to table” economy. She is a certified Sommelier with the Court of Master Sommeliers, the International Sommelier Guild, French Wine Scholars Guild, and WSET credentialed Sake specialist, as well as an active member of the Canadian Association of Professional Sommeliers (CAPS).
After graduating from culinary academy, Van Doren began work deep in the “back of house” kitchen, rising to Pastry Chef at the Blue Water Cafe, and later, managing Pastry at the Sooke Harbour House and the Four Seasons Hotel Vancouver. At the famed Sooke Habour House, she learned to use and source only sustainable and organic products from within the local region.
Answering the call of Bacchus, Van Doren transitioned to the “front of house” to better fulfill her passion for wine as a Sommelier at the fine dining tables of the Opus Hotel and the Hawksworth Restaurant, and later as Maître d’ and Manager at the renown Le Crocodile Restaurant.
In recent years, Van Doren founded the Grower Champagne Festival and the upcoming Champagne Global Festival to educate and promote in Canada the fine wines of the Champagne region
Van Doren is a multiple Gold and Platinum award winner from the Vancouver International Wine Festival as well as a noted food and wine educator, speaker, judge, television and radio guest. She is active member with Slow Food International, the global grassroots organization to promote local food cultures and traditions. She has organized two Slow Food/Wine festivals in Canada. In 2015, Van Doren was honored with the Legacy Award by Les Dames d’Escoffier International. Away from the culinary and wine world, she serves on the Board of Directors of the Vancouver Metropolitan Orchestra.
Snaps on Dom Perignon & The widow Clicquot
Dom Perignon was a French Benedictine monk famously quoted as saying to his fellow monks “COME QUICKLY, IM SEEING STARS” when he first created his delicious bubbly champagne. Originally – he was trying to stop bottle fermentation. Dom Perignon is located in Epernay and produced by Moet & Chandon.
Veuve (widow) Clicquot Ponsardin is credited with developing the riddling table process to clarify champagne and blended rose champagne (pink). Veuve Clicquot is located in Reims.
