Canada’s Great Kitchen Party is the lead-up to the Canadian Culinary Championship and is underway in cities across Canada. Vancouver’s competition takes place on November 24, 2022, at the Westin. We’ve asked the chefs a few questions to get to know them a bit better and here are the results from Chef Scott Korzack from Bacaro Vancouver.
Tell us a little bit about your style of cooking.
I enjoy letting great ingredients shine. I enjoy food to look simple, yet there is a lot of work and craft behind it.
Where do you eat in Vancouver when you have a day off? Top three spots perhaps?
Marutama, Elisa, Fanny Bay.
What would be your ideal food day?
I loved my days in Venice a few weeks ago. Walking 25km/day, eating and drinking whatever piqued my interest and taking in the sights and sounds and back alleys of the city.
What trend do you wish would die?
Over industrialized, low-quality food.
What trend/s do you wish would be next?
Supporting craftsmanship. Whether that is farmers, butchers, or small restaurants.
Do you have a favourite food and beverage pairing?
Nachos and lager.
What ingredients do you always have on hand?
Anchovies and olive oil. I rarely cook at home, so things won’t go bad.
What’s your go-to recipe when you’re eating at home?
Walking to a restaurant to dine in or take out.
What is your favourite tool in the kitchen?
Spoons.
Any hints on what dish you will be preparing for the Great Kitchen Party?
It’ll blend an Italian classic while using local ingredients.
What wine/beer/libation are you pairing with this year?
Unsworth Pinot Noir.
