Those who have missed Chef Brian Fowke’s cooking will be glad to hear that he is back in Vancouver and has put his money where his, and soon to be your, mouth is. He’s on the cusp of opening “Kitsilano daily Kitchen” at 1809 West 1st. The menu is under development, but Fowke is bringing in items from top local producers such as 2 rivers meats NY Steak or Muscovy Duck Breast. It will change daily, but this is a spot where you’ll order a main, and leave satisfied.
Fowke is dealing with suppliers that can bring him a product he can work head to tail with. He’ll take a whole duck, cook up breasts one night, a confit the next and perhaps a duck-based soup on the third.
I’ve followed Fowke about the city for over a decade and have seen him put passion into every plate. Now that he, and wife Kathy, have put money on the line and own the concept, Vancouver should see him really shine. After a brief stop into the yet to open kitchen, I know this is a spot that will attract serious diners.
Opening in May.
At those price points? He doesn’t give up, I’ll give him that. Unfortunately without a Bud Kanke bankrolling his endeavour, combined with his limited talent and a known suicide spot – well I wish him well.
I have been in and can tell you that the prices are what they should be for the portions. They are full meals. Fowke is using premium ingredients, and he is the only one in the kitchen, so keeping labour costs down and making this location financially feasible. I am heading back soon. Menu changes….DAILY!
