DHM Takes Pub Food to Fresh New Heights

Donnelly Hospitality Management, the company behind Vancouver’s leading nightclubs and pubs, welcomes Michael Knowlson as the company’s newly appointed Executive Chef.

In his new role helming DHM’s talented kitchen brigade, London, England-born Knowlson is responsible for taking the pubs’ menus to a new level by creating simple-yet-inventive, well-executed pub fare. Knowlson is focused on showcasing high-quality ingredients that are fresh, local, seasonal and organic.

In keeping with Knowlson’s fresh approach to pub food, DHM is pleased to announce that all Donnelly Pubs are Ocean Wise and Green Table Certified.

DHM is committed to helping protect the environment through a variety of in-house programs, and is proud to be the nightlife industry leader in sustainability initiatives. The Donnelly Pub Group and Granville Room actively participate in the Vancouver Aquarium Ocean Wise Program, which encourages and promotes sustainable seafood options on restaurant menus, as well as the use of regional, in-season food products where possible.

As of May 14th, all Donnelly Pubs will be Green Table Certified, and have implemented extensive initiatives to reduce waste, conserve water and energy, and reduce pollutants. The Green Table programs include recycling of plastic, glass and paper products; installing energy efficient thermostats, lighting and timers; use of biodegradable chemicals and cleaning products; phasing out plastic materials and replacing them with recyclable materials; and increased staff awareness and training.

Executive Chef Michael Knowlson has served as Executive Chef at Bacchus Restaurant in the Wedgewood Hotel and at Sequoia Grill at the Teahouse in Stanley Park. Prior to moving to Vancouver, he served as Executive Chef of cutting-edge London restaurants First Floor and 192, along with the private Groucho Club, where he cooked for such notables as Bill Clinton, Tom Cruise, Julia Roberts and Al Pacino.
