Burt brings with him over 16 years of culinary experience honing his craft across the country from Chateau Lake Louise to finishing his apprenticeship with Maurizio Bertossi in Halifax. He then traveled to Australia, working his way across the country finishing with a chef poison at the company kitchen in the Barossa valley before returning to Canada to take a position at Susur Lee’s acclaimed restaurant “Susur” in Toronto.
“Peter’s background makes him the obvious choice to head our culinary team at nu,” says owner, Harry Kambolis. “He grew up in St. Johns, Newfoundland picking wild berries and growing vegetables. Talk about knowing where your food comes from. That’s exactly what we’re about at nu – serving up quality local farm to table cuisine.”
Burt also spent a number of years cooking abroad in, Spain and Taiwan, taking in various regional cuisines and carving out his culinary identity. This resulted in a position with Vancouver’s Culinary Capers, as Chef de Cuisine for B.C. Canada Pavilion in Beijing for the 2008 Olympic Games.
Kambolis adds that, “Peter loves quality seafood and is really eager to be apart of Vancouver’s emerging culinary identity. As Chef de Cuisine he is really settling in and expressing himself by building on our farm to table tradition.”
