Tofino’s Feast BC includes dinner specials at various restaurants throughout the region and I was lucky enough to be there when Zambri’s Chef, Peter Zambri, was cooking at Shelter.
Along with the regular menu, Zambri cooked up a special Italian version, which brought in the crowds, as the one thing Tofino doesn’t have is an Italian Restaurant.
I don’t think one was meant to try the whole menu, which included a chickpea soup, polenta and brandade appetizer, spot prawn spaghetti and a salmon dish, but I did do my best to get pictures of all, along with a few of the other dishes emerging from the busy kitchen.
The highlight for me was the polenta with the brandade. A combo I’d not thought of and will be sure to duplicate at home. Another night of culinary excellence.
