Don’t miss Negroni Week in Vancouver: where to drink one before Sunday

Negroni Week runs through September 27, with classic pours, inventive riffs and a few very good reasons to plan an early drink.

There is something deeply satisfying about a Negroni when the evenings start to turn. It is bitter, herbal, citrusy and just a little bit dramatic: a drink that knows exactly what it is doing.

Negroni Week is on now through Sunday, September 27, bringing participating bars and restaurants together in support of Slow Food International. Vancouver has no shortage of places to order the textbook gin, Campari and sweet-vermouth formula, but this year a handful of spots are taking the occasion further, with locally minded versions, flights and decidedly indulgent twists.

Copperpenny Distilling Co.: a whole month of Negronis

North Vancouver’s Copperpenny has made a bigger celebration of it, turning the occasion into Negroni Month. The distillery is offering nine house versions, including a Negroni slush, plus a three-pour flight for anyone who wants to compare styles rather than choose only one. There is also an Evolution of the Negroni masterclass on Saturday, September 27.

ARC at Fairmont Waterfront: five thoughtful riffs

ARC has built a five-cocktail Negroni menu, beginning with a classic made with Citadelle Gin, Campari and sweet vermouth. The Contemporary uses Waterfront Gin with Esquimalt sweet vermouth and bitter orange. The Experimental brings together Waterfront Gin, Esquimalt smoked vermouth, Suze, cardamom bitters and lemon. There is also the ‘Couve-vardier, a rye-led variation with Amaro Arbutus and flamed orange zest, and Pollinated, which adds Drambuie, alpine bitters and a honey tuile.

Pourhouse: go classic, dirty or tiramisu

Pourhouse is always a strong call for a proper cocktail, and its Negroni Week lineup has the right amount of fun. Alongside the classic, there is a Dirty Negroni made with olive oil-washed gin and a Tiramisu Negroni with espresso, chocolate bitters and a cacao mascarpone whip. For a group, there is also a Negroni Tower.

More places to make a night of it

In Chinatown, Fiorino is serving the Albicocca, an aperitivo-minded variation made with Copperpenny gin, apricot-infused Lillet, Yellow Chartreuse and fennel bitters. On Commercial Drive, Caffè La Tana’s Pepino’s Negroni combines Tanqueray, Aperol, Campari and Chinotto.

If the craving is for the real, unfussy thing, the Bar at L’Abattoir is a fine place for it: Beefeater gin, sweet vermouth, Campari and an orange twist. The Cascade Room is another lovely, low-lit choice for a classic before dinner.

Negroni Week is a useful nudge to try a new bar, order the variation that would not normally be your default, or simply settle in with the original. Just do not leave it until next week.

Negroni Week runs September 21–27, 2026. Check directly with venues for availability, hours and reservations.
