This class will include two flights of three wines paired with selected bites of food, with seasonings and sauces selected to build an understanding of weight and flavours in pairing dynamics. Each flight provides the opportunity to mix and match all the pairings to see what works as well as what doesn’t. We will discuss and taste the theory as to why and why not. The session is designed to give every participant not only the theory and first hand, side by side experience behind food and wine pairing, but also the confidence and comfort to select their own pairings in a practical everyday setting, whether it be at home or in a restaurant.
