When winter lingers in Vancouver, citrus isn’t usually the first thing that comes to mind. Yet inside a 6,000-square-foot greenhouse on Salt Spring Island, more than 30 varieties of citrus are thriving — and now headlining the newest tasting menu at Burdock & Co.

Menu Highlights
Red Sea Urchin & Meyer Lemon
Local red sea urchin served as a sauce alongside sake-kasu braised burdock, burdock-peel custard and pickled bull kelp.

Charcoal-Grilled Squab with Palestinian Lime
Sweetly floral lime appears in glaze, honeyed jus and mousseline stuffing.
Bergamot Pommes Anna
Layered buttery potatoes perfumed with Mediterranean orange, crème fraîche and chimichurri.

Ocean-Forest-Orchard Dessert
Candied kombu, spruce-tip mousse, apple granita, preserved quince and Buddha’s hand foam.
