CIBO TRATTORIA IS PROUD TO PRESENT THE FIRST IN A SERIES OF FUNDRAISING DINNERS – JUNE 14TH 2012 IN SUPPORT OF THE SLOW FOOD ORGANIZATION
Since opening in 2009, Cibo Trattoria’s, Executive Chef Neil Taylor has been a leading proponent of the Slow Food style cooking with his use of sustainable, organic and in season ingredients. In a first for British Columbia, Cibo and the Slow Food Vancouver organization are pleased to announce an official partnership in their mutual commitment to the slow food philosophy. A series of fundraising dinners (with partial proceeds going to Slow Food Vancouver) are planned with the first to take place on Thursday, June 14. Tickets for the event are just $60.00 and the menu is a showcase for all that this movement embodies:
Veal crudo-shallots, capers, ramps, quail egg, parmesan
Leaves and herbs, shaved turnips, radishes, kohlrabi, grilled spring onions, buffalo ricotta
Agnolotti di guido-veal, greens, sage butter
Roast veal, vignole of artichokes, peas, fava’s, prosciutto and mint, roasting juices
Rhubarb fool, almond cookies
*Sustainable and organic wine pairings from Italy and Canada will also be available.
“For this first dinner we are featuring local producers Pitchfork Farms for produce and Six Masters Farm for the veal,“ says Taylor. “They are wonderful suppliers who are truly committed to the slow food movement and you really do taste the results in your mouth – unbelievable flavors and quality,” continues Taylor.
Additional fundraising dinners are scheduled for August 23, November 15 and January 31.
