Cookshop Classes for September

Now is a great time to brush up on your culinary skills! Come into our kitchen for a lineup of excellent classes! Join us for our Fundamentals of Cooking and Wilton Cake Decorating series starting this fall.

EARLY SEPTEMBER HIGHLIGHTS 

THAI BASICS – Thursday, September 1st – 6:00 – 9:00pm

Learn all about the basics of Thai cooking with our favorite Chef Thaung Yan! He’ll give you tips about authentic ingredients, where to buy them & how to handle them. Chef Thaung will teach you how to achieve the delicate balance of sweet, hot, sour and salty flavors – the hallmark of Thai cuisine.

·  Pad Thai with prawns

·  Seafood tom yum soup

·  Green papaya salad with dried shrimp

·  Keng kei – chicken curry with mini eggplant

·  Pad moo – stir fried pork studded with green beans

·  Thai coconut rice

·  Thai desert with palm sugar & coconut cream

PASSPORT TO ITALY: ROME – Friday, September 2nd – 6:00 – 9:00pm

All roads lead to Rome! Chef Peppe continues singing and cooking his way around Italy, as we take you through a series of regional menus. Tonight, he takes us to the Lazio (Roman) region, famous for its pecorino romano, pasta alla carbonara and gelati. Salute!

·  Fettucine alla carbonara – the classic pasta sauce with cream, proscuitto, egg, pecorino romano

·  Fava beans and escarole salad, with pancetta, artichoke hearts, peas, onions, olive oil

·  Roman-style leg of lamb, cooked with orange and olives

·  Chicken scaloppini al limone – chicken slices with lemon and white wine

·  Lazio dolce al limone – lemon cake

SUMMER TAPAS – PARTICIPATION – Monday, September 5th – 1:00 – 4:00pm

Join Executive Chef Romy Prasad as he shares some excellent recipes for summer entertaining. These dishes are perfect to enjoy while sitting on a deck in the sunshine with a fine wine. In this participation class you will learn to make:

·  Beef tartar with capers & shallots served on toast points with a quail egg

·  Margarita pizza with fresh tomatoes, young bocconcini & fresh basil

·  Potato ravioli filled with chicken & sage

·  Crispy Calamari with Tomato Caper Sauce

·  Local B.C. halibut cakes served with spicy aioli

·  Flourless chocolate cake

OCEANWISE WITH KAREN BARNABY – Tuesday, September 6th – 6:00-9:00pm

The Fish House in Stanley Park is proud to be a member of the Ocean Wise sustainable seafood program. This program was created to help restaurants and their customers make environmentally friendly seafood choices. This evening Executive Chef Karen Barnaby is presenting innovative seafood recipes – Ocean Wise. Today you will enjoy:

·  Oyster Motoyaki – succulent oysters baked with wasabi mayonnaise

·  Wild Salmon with slow roasted roasted tomatoes, oregano, basil and lemon

·  Oven roasted Halibut with Chardonnay and corn butter

·  Albacore Tuna “Melt”- fresh tuna is used in this playful take on tuna melt

Sablefish Broiled in Sake – this treatment richly caramelizes the fish and enhances its buttery smooth texture

A good grasp of the basics of cooking will not only give you the ability to apply the technique, you will also learn the standards of quality. French-born and trained chef Eric Arrouze will lead you into the classics. The classes will cover, knife skills,vegetable cuts, sauces, stocks, meats, vegetables, seafood, desserts and more in these full hands-on workshops. Gain confidence to cook like a chef in your own kitchen!

WILTON CAKE DECORATING SERIES Sunday afternoons in September & October – 1:00 – 5:00pm

CAKE DECORATING – THE WILTON METHOD
Sunday afternoons from 1:00 to 5:00 pm during September and October
24 hours of instruction
Course I: September 11th & 18
Course II: October 2 & 16
Course III: October 23 & 30

Learn the Wilton Method of cake decorating — from initial concepts and techniques of simple borders and drop flowers to elaborate floral designs and finishes, then on to fondants, lace and embroidery and tiered cakes. Class participants pay no tax on most purchases in the store, including Wilton products! Fee includes course books and student cake decorating kits.
